Creamy Asparagus Soup For The Win!

Ingredients

For the creamy asparagus soup you should get:
5 to 6 cups chicken broth
2 pounds green asparagus
3 tablespoons unsalted butter
1 chopped large onion
1/4 teaspoon fresh lemon juice
1/2 cup heavy cream

Instructions

Prepare the asparagus by cutting the tips from 12 pieces, 1 1/2 inches from the ends. Save them on the side. Also, cut the pieces of asparagus into 1/2-inch pieces.

Get a pot and cook the onion together with 2 tablespoons butter at low heat. Once it’s soft, you can include the pieces of asparagus. Season with salt and pepper.

Cook them for 5 minutes, while also stirring. Then, pour 5 cups of broth, let it simmer and cover the pot. You will need to check the asparagus and make sure it’s very soft. This should take 15 to 20 minutes.

While you’re waiting, put the tips in salted boiling water for 3-4 minutes. Take them out and drain the water.

When the asparagus is cooked, place it in a food processor or a blender. It should be smooth and with an even consistency.

Pour it back in the pan, then mix it with the heavy cream. You can add more broth if you prefer it thinner.

When the asparagus soup starts boiling, add the rest of the butter and lemon juice.
