Minestrone Soup is the Best Way to Throw Together Something Amazing

Minestrone soup is a soup that everyone should know how to make. It is super colorful, delicious, and packed full of healthy ingredients. It’s the best thing to have in your fridge for a last minute dinner party, or just something to eat for lunch. It comes together super quickly but really packs in the flavor. Instructions

  1. Chop up the mirepoix, which is carrots, celery, and onion. Saute the carrots and celery in olive oil first for about 5 minutes, and then add in the onions.
  2. Once it’s cook until translucent, add in chopped garlic.
  3. Once the garlic is fragrant, add in a can of whole peed tomatoes as well as dried oregano, basil, and sage.
  4. Cook for about 10 minutes and then add in vegetable broth, white beans, and a few bay leaves.
  5. Bring to a boil and then down to a simmer for anywhere between 30 minutes up to a couple of hours.
  6. Before serving, cook whatever pasta you have, although shells are fun because they catch the beans and some broth as well.
  7. Serve the pasta in the soup and enjoy!
