Salmon Cakes Are The Tastiest Way To Serve Salmon

You can now use your leftover salmon for the tastiest, easiest recipe ever. Salmon cakes are the perfect way to upgrade the taste of this fish! They are very simple to make and take only half an hour.

I just got the cutest email from a reader. He was looking for a recipe I had posted back in 2009. Here's what he said, "Many years ago, you had a recipe up for crispy salmon cakes with a cucumber salsa/sauce. When I find links for that recipe, it takes me to your thai-style fish cakes. Would it be possible for you to repost that recipe, or perhaps send it to me? My wife and I are celebrating ten years together, and this was one of the first dishes I cooked for my wife." When I read the email my heart sank, because I knew I had deleted that recipe. ⁣ ⁣ You see, that salmon cake recipe was from the days when my blog was over on Blogspot and I was just winging it. My recipes were hand written on a piece of scratch paper, I'd take a pic or two and slap it up on the blog willy nilly. In the last couple of years I have cleaned up a ton of old content. I deleted a bunch of recipes that didn't have any traffic, especially those from the days of my less refined process of recipe development. So I'd delete the post and I'd redirect the url to a newer better recipe. Just in case a link to it existed out there somewhere.⁣ ⁣ So then this email comes in and I knew that salmon cake recipe was long gone. And I typed up an apologetic email saying that I was sorry I had deleted it and couldn't find a word doc version of it anymore. But before I hit send, I checked my paper file drawer. (Yes I am so old school that I keep all my old recipes tests in a paper file.) And guess what….!!!! I found the recipe! Ingredients

To make these salmon cakes you should get:
1 egg
1 7-8 oz can salmon
1 teaspoon lemon juice
2 sliced scallions
1/2 teaspoon garlic powder
1 tablespoon mayo
salt
pepper
1/4 to 1/3 cup toasted bread crumbs or flour

Drain the can of salmon before you start. Another great idea is to use the salmon you have left from the previous day or before.

Instructions

This recipe is so easy you won’t even believe it. It takes around half an hour to make the salmon cakes, including prep.

Start by combining all the ingredients in a large bowl. Mix them well and let them stay in the bowl for 5 to 10 minutes. Feel free to add extra bread crumbs depending on the texture you prefer.

Create two cakes from the mixture, and you can now cook them. Get a skillet and heat some oil on it. Cook the cakes for 4 to 5 minutes per side. You can add your favorite toppings or salad on the side.
