]]>Black beans is one of the better vegetarian options for people who want a lot of flavor but don’t want to spend a lot of money. Whether you buy it in bulk dry or in a can, black beans are really affordable and can be manipulated in lots of different and nutritious meals like these two below.
Turning black beans into a dip couldn’t be easier. All you have to do is to cook them with diced onions, whole garlic cloves, some spicy pepper, and fresh tomatoes. Spice it up with cumin, paprika, and a pinch of salt. Pour everything into a food processor and blend until smooth. Finish with a squeeze of lime and some fresh cilantro and you’re ready for dipping!
This soup is super hardy and perfect for a big crowd. Just saute some diced pepper, onion, and celery together until they’re soft. While that cooks, mash up half of the black beans you’re using and keep the other half whole. Throw in diced garlic and cook for just a minute. Finally, pour in fresh tomatoes, broth, cumin, coriander, chili powder, bay leaves, and two kinds of beans. Bring to a boil, simmer for 15 minutes, and serve!
