Filled with aromatic onions, celery, and bell peppers, gumbo is a proudly Louisianan dish, with influences from West African, French, German, and Choctaw cooking. If you’re feeling adventurous or perhaps craving something new, here’s how you can whip up this scrumptious, spicy Cajun dish at home.

Ingredients

  • 1 yellow onion
  • 1 green bell pepper
  • 2 celery stalks
  • salt
  • 12 ounces sausage
  • 1 tablespoon cajun seasoning
  • 4 tablespoons unsalted butter
  • chicken broth
  • 1 pound shrimp
  • 3 scallions
  • ground black pepper
  • 15 ounces tomatoes
  • Cooked white rice

Instructions

  1. Place butter into a large skillet and melt over a medium heat before adding flour. Continue to stir the mixture for 12 to 15 minutes, until a dark caramel color is achieved.
  2. Add celery, onions, and peppers to the skillet, continuing the heat the mixture for another 8 minutes or so, until softened.
  3. Toss the sausage and garlic into the skillet and sprinkle the cajun seasoning. Then, throw in the broth and tomatoes, bringing the mixture to a boil.
  4. Once boiling, reduce the stove’s heat, allowing the concoction to simmer. Continue stirring for about an hour until thickened.
  5. Six minutes before you turn off the heat, add shrimps to the mix. Stir in some scallions and cook according to taste.
  6. Pour the mixture evenly into however many plates you need to use and add rice for serving.
