We didn’t manage to get to Sicily for the summer, but that doesn’t mean we can’t eat like a local! Aside from pasta with sardines and deep-fried arancini balls (which we definitely won’t say no to), this orange Bundt cake is quintessentially Sicilian. Have it with an espresso and dream of the Mediterranean Sea!

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons grated orange zest
  • 1 ¼ cups fresh orange juice (from 3 oranges)
  • 1 ½ tablespoons baking powder
  • 1 ½ cups granulated sugar
  • ½ cup vegetable oil, plus more for greasing 
  • 3 large eggs

Instructions:

  1. Preheat the oven to 350°F. 
  2. Stir together the flour, orange zest, and baking powder in a medium bowl, and set aside.
  3. Beat the sugar, vegetable oil, and eggs with an electric mixer on high speed until almost white (around 1 minute and 30 seconds). Add in the orange juice and beat on low speed until combined. With the mixer running on low speed, gradually add the flour mixture. Beat for about 1 minute, until just combined, but be careful to not overmix. 
  4. Transfer the batter to a Bundt cake tin that has been greased with vegetable oil. Bake for 40-45 minutes, until a wooden toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack and let it cool completely for about 1 hour.

The best part of celebrating birthdays has to be the cake. But, vanilla cake with chocolate icing can get boring. Try something new with this delicious champagne cake that’s great for any occasion. Check out the recipe below.

Ingredients:

For the Cake:

  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 3/4 cups all-purpose flour
  • 5 large egg whites, room temperature
  • 1 cup softened unsalted butter
  • 2 1/2 teaspoons baking powder
  • 2 cups granulated sugar
  • 1 cup champagne, room temperature

For the Frosting:

  • 2 1/2 cups heavy whipping cream
  • 1/4 cup champagne
  • 1 1/2 cups chopped fresh strawberries
  • 1 cup confectioners’ sugar, sifted
  • fresh strawberries

Instructions:

  1. Turn on the oven to 350 F degrees, prepare 2 8-inch cake pans and add round parchment paper to both pans.
  2. Combine the baking powder, salt, and flour together.
  3. In a second bowl mix the champagne, oil, egg whites, and vanilla together.
  4. Next, include the egg white mix and flour mix in the third bowl with the butter and sugar.
  5. Transfer one half of the batter in one cake pan and the other half in the second pan.
  6. Leave the pans in the oven for 25 to 30 minutes, then let the cake cool down for 10 minutes.
  7. Use a bowl to beat the butter with a mixer, then include the 4 tablespoons champagne, 6 cups powdered sugar, and vanilla.
  8. Beat again, and if you need to you can add more sugar or champagne depending on the consistency.
  9. Assemble the champagne cake. Add one cake layer on the bottom, top it off with the frosting, and do the same procedure once again.
