4 egg whites
1/2 teaspoon salt
2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking powder
1 teaspoon vanilla
12 maraschino cherries cut in half
1/2 cup butter
1/3 cup maraschino cherry juice
1/4 teaspoon baking soda
1/2 teaspoon almond extract

3/4 cup buttermilk
1/4 teaspoon baking soda

Before you start making the cherry cupcakes, make sure that you leave the egg whites and butter at room temperature for half an hour. Prepare your muffin cups with cooking spray and set the oven to 350 F degrees.
Combine the baking powder, salt, flour, baking soda and mix them all together. Use a 2-cup measuring glass to mix the cherry juice and the buttermilk.
In another bowl, mix the butter with an electric mixer for half a minute. Include the vanilla, sugar, and almond extract. Continue beating and start adding the egg whites one by one. Pour the flour and buttermilk mixes to the bowl.
Divide the batter between the muffin cups. They should be 2/3 full. Add one cherry half to each cupcake.
Bake them for 15 to 18 minutes, then let them rest for 5 minutes. Decorate them with the cherry almond butter frosting and the whole cherries.
