We all know that spinach and lettuce are two plants that can be eaten, but the reality is that there is a whole world of edible plants out there that most of us don’t know about.

Here are four plants that you didn’t know that you could eat.

Dandelion

Dandelions aren’t only an annoying garden weed! In fact, you can use them in teas, salads, or eat them raw and get the benefit of a huge boost of antioxidants and vitamins A, C, and K. They taste gentle and non-offensive, making them a versatile option.

Lavender

You might be familiar with lavender in oils and soaps, but did you know that you can eat it as well? Its delicate, citrusy taste goes great in ice creams, desserts, and even in certain pasta sauces!

Sunflowers

You might be familiar with eating roasted sunflower seeds, but most don’t know that the roots, stems, and flowers of this plant can be eaten too. The flowers can be ground into flour or used in teas, and the young buds can even be steamed and eaten whole!

Pansies

If you are looking for a bright and colorful addition to your plate, how about a pansy flower? These plants are totally edible and add a striking, beautiful garnish to all kinds of dishes and desserts.

Dandelions are much more than just a weed, it is a flower that has been made into wine for hundreds of years in Europe. It is said that it has Celtic roots, but has recently made a comeback. Here is a simple step-by-step process on how to make this historic wine.

Ingredients

3 quarts dandelion blossom, without any green part, 1 gallon of water, 2 organic oranges, 1 organic lemon, 3 pounds of sugar, 1 package wine yeast, and 1 pound of raisins.

Method

  1. Bring the water to a boil and pour it over the dandelions which should be in a separate pot. Cover and let it steep for 3 days
  2. Zest 1 lemon and 1 orange, and then just regularly peel the rest. Cut the fruit into slices.
  3. Add the zest and peels to the dandelion mixture and bring to a boil
  4. Strain the liquid and dissolve the sugar. Let it cool.
  5. Add the yeast, raisins, and the citrus slices. Cover with a towel and secure with a rubber band.
  6. Once the mixture has stopped bubbling, about 1-2 weeks, use several layers of cheesecloth or a flour sack and strain it.
  7. Pour into sterilized bottles and place a deflated balloon on top to make sure fermentation has stopped
  8. Once the balloons stay deflated for 24 hours, they’re ready to be corked, stored, and enjoyed!
