]]>Pesto is a delicious sauce for pasta and it’s also incredible on bread! Make your own by blitzing together basil, parmesan, pine nuts, garlic, and olive oil in a food processor until smooth. Or, get a jar from the grocery store! Spread it on top of the focaccia, top it with a little more cheese, and instantly your mouth will be watering.
Since focaccia has a similar texture to pizza, it’s no wonder that roasted vegetables taste absolutely delicious on it! You can roast the vegetables separate or right on top of the focaccia so all the juices drip into it. Good vegetables to use are onions, zucchini, eggplant, and tomatoes, covered in herbs like basil, thyme, oregano, and parsley.

]]>For the focaccia bread, you need:
2 tablespoons olive oil
1 lb strong white bread flour
14 fl oz cold water
2 teaspoons salt
olive oil
2 sachets dried easy blend yeast
fine sea salt
Combine the olive oil, salt, flour, 10 1/2 fl oz water, and yeast in a bowl. Mix them with your hands, and you should get a dough at the end.
Start kneading and after 5 minutes you should be done. While you’re kneading, slowly add the rest of the water.
Place the dough in the bowl, and spread it all over. Start kneading it inside the bowl, by also spreading it, then tucking it again. Do this for 5 minutes.
Add oil to the spot in the kitchen where you work and knead the focaccia dough there as well for 5 minutes.
When you’re done, leave it in the bowl. Cover it and wait for it to double up.
Prepare two baking sheets and separate the dough in two. Place them on the baking sheets and wait for an hour. Then place them in the oven. Bake for 20 minutes for 400 F degrees. Add oil on top and fine salt.
