When you think of almonds, you probably think of a brown, dry food that is pretty similar in taste and consistency to other well-known nuts, right?

Well, did you know that there is a completely different way to experience almonds?

Green almonds are a little-known gastronomic treasure that consists of the exact same base material as the traditional almonds that you’ve probably tried before.

Instead of eating a brown, dried nut like what you typically associate with almond, you’ll actually be eating a creamy green fruit if you try one of these.

Before almonds harden and turn into a true nut, they are actually a green fruit that has a jelly-like consistency and can be eaten whole, fuzzy green skin and all. While they aren’t exactly as sweet as a traditional fruit like a pear or a peach, they are totally different than a toasted almond.

Be sure to keep your eye out for green almond season, however, as they are extremely seasonal. They can only be enjoyed for a couple of weeks per year, depending on the area in which they have been grown. Typically, this comes in late spring to early summer.
