  • 1 large onion, roughly chopped
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 4 garlic cloves, unpeeled
  • 1 bay leaf
  • 6 whole black peppercorns
  • 10 cups cold water
  • Salt to taste

Instructions:

  1. Prep your chicken and vegetables, ensuring a good mix of bony pieces and aromatic vegetables.
  2. In a large pot or Dutch oven, combine all ingredients. Bring to a boil over medium heat, then reduce heat and simmer gently for 1-2 hours, skimming off any foam that forms.
  3. The longer you simmer, the deeper the flavor. For a richer broth, aim for 3-4 hours.
