The Middle East is full of robust flavours, rich spices, and colourful dishes. The cuisine of the region typically relies on fresh ingredients, making use of fresh fruit and vegetables which are grown in abundance in the warm conditions.

A signature Middle Eastern dish is Tabouleh — a vegetarian salad served at the beginning of the meal as part of a mezze. Although traditionally made with bulgur wheat, cauliflower rice gives it a carb-free twist.

Ingredients

• 1 small to medium head of cauliflower
• 2 cups small cherry tomatoes (halved)
• ½ small red onion (finely minced)
• 1 small cucumber (finely chopped)
• 1 large handful fresh parsley (finely chopped)
• 1 handful fresh mint (finely chopped)
• ½ cup pine nuts
• ½ cup pomegranate seeds

Dressing

• ¼ cup olive oil
• Juice of one lemon
• Salt
• Pepper
• Ground cumin

Method

  1. Cut the cauliflower into chunks and discard the core. Place into a food processor and pulse until the consistency of cous-cous.
  2. Lightly toast pine nuts in a pan.
  3. Combine tomatoes, cucumber, onion, parsley, mint, pine nuts, and pomegranate seeds in a bowl.
  4. Make dressing by combining olive oil and lemon juice and adding seasoning to taste.

Il vero jolly dei beduini che attraversano il deserto a cammello🐪⠀ altro che oasi🌴:⠀ è il couscous!!!!😋💃🎉😍⠀ ⠀ (🤔E comunque, nel mio fantasioso immaginario, quell'enorme tipico turbante avvolto sulla testa👳🏽 è nato apposta per nasconderci i ghiacciolini dentro😁😂, tipo quelle tavolette refrigerate che si mettono nelle borse dei picnic😜😂..⠀ ne infili una una ventina…chiudi tutto, annodi stretto, e via in viaggio tra le dune 🐪💃🌴❄🙋🏻 quasi quasi lo faccio anch'io 😂 #nuovemodeestate2019 😌)⠀ ⠀ *⠀ ⠀ Questa insalata di couscous è fresca, sana e aromatica, di ispirazione libanese, mi è piaciuta tantissimo🍃💡Se fatta la mattina presto, tenuta al fresco e servita fredda, fa davvero tornare l'appetito🙌🏻😍🔝⠀ ⠀ ⠀ ⭐Couscous freddo prezzemolato🍃, con pomodorini limone fagiolini e quartirolo⭐⠀ ⠀ 📝Per 2 pers:⠀ ⠀ 160g couscous precotto⠀ 200g fagiolini⠀ 10 pomodorini ciliegini⠀ 60g quartirolo fresco⠀ 1 bel mazzetto di prezzemolo⠀ 2 spicchi d'aglio⠀ 5/6 fili di erba cipollina⠀ 4/5 foglioline di menta⠀ 1 limone⠀ 4 cucchiai olio evo⠀ sale pepe⠀ ⠀ ⠀ Reidratate il couscous. Mettetelo in una ciotola e versateci sopra acqua salata portata a bollore con 1 cucchiaio d'olio fino a coprire di 1/2 cm il livello del cous cous.⠀ Coprite la ciotola con un piatto e fate riposare 5 minuti.⠀ Quando è bello gonfio e l'acqua assorbita, sgranatelo con la forchetta, e tenete da parte.⠀ Cuocete a vapore 10 minuti i fagiolini tagliati a pezzettini di 1-2 cm.⠀ Tagliate i pomodorini a spicchietti e il quartirolo a cubetti. ⠀ Aggiungeteli insieme ai fagiolini nella ciotola del couscous.⠀ Mettete in un frullatore 1 mazzetto di prezzemolo lavato, 2 spicchi d'aglio, l'erba cipollina spezzettata con le mani, le foglioline di menta, il succo del limone spremuto, 1 pizzico di sale. Cominciate a frullare versando l'olio a filo, fino a ottenere una salsa pestata bella verde.⠀ Versate la salsa frullata nel couscous, amalgamate sgranando bene con la forchetta per distribuire il condimento e le verdure.⠀ Ponete la ciotola in frigo per almeno 3-4 h , e servite freddo dopo una bella mescolata.⠀ ⠀ *⠀ ⁉A proposito, voi dove andate in vacanza quest'estate? 😁🏝⠀ ⠀ Happy appe mimmi/e bel
