]]>Start by sautéing your vegetables with olive oil in a large saucepan or wok, in order of how long they take to cook, adding garlic about halfway through. You might start with the onions until they soften, then garlic, before cooking down your leafy greens, and just barely cooking your cherry tomatoes. Keep in mind, the veggies will cook a little more when you add the hot pasta. Sprinkle pepper and red pepper flakes on top and mix.
Cook your pasta al dente according to package instructions, saving a bit of pasta water just in case you want to thicken your sauce.
Drain the pasta and add it while hot to the vegetables, then sprinkle as much feta and parmesan as you like and mix it all together. If it seems a bit dry, add a bit more olive oil and some of the pasta water to thicken things up. Taste, and salt as needed. Serve with more parmesan on top.

]]>To prepare the moussaka you should get:
Place the potatoes in a pot and let them boil for 20 minutes. Once they’re done you can leave them on the side to cool down.
Start cooking the onion together with 2 tablespoons olive oil until it becomes soft. Then, include the meat and continue cooking for 5 more minutes. Add the passata, garlic, and spice.
Wait for the mixture to start simmering, remove it from the oven. Set the oven to 220 C degrees and prepare a griddle pan . Fill it with the aubergines and cover them with the remaining oil. Cook them for 2 to 3 minutes per side.
Cut the potatoes, and you can start putting together the moussaka.
Add 1 tablespoon oil on the bottom of an ovenproof dish. Do one layer of potatoes, aubergines, seasoning, and the meat. Do this all over again. Pour the creme fraiche on top, followed by the cheese. Cook for 10 minutes in the oven.
