Moroccan food has so many different layers, and combines really interesting flavors together in order to build comforting, healthy, and satisfying dishes. This Moroccan-inspired chickpea dish is perfect for potlucks, is freezer friendly, and is the perfect mix of sweet and savory.

Recipe

  1. If you’re using dry chickpeas, soak them overnight, changing the water every few hours if possible, and then cook them for about an hour before beginning the rest of the process.
  2. If you’re using canned chickpeas, rinse and dry as many cans as you want, depending on the crowd you’re feeding.
  3. Chop up a red onion and saute it in a bit of oil along with cumin seeds or powder, paprika, ground ginger, coriander, ground all spice, and a touch of cinnamon.
  4. While that cooks, mince some garlic and dried apricots, raisins, or whatever dried fruit you like most.
  5. Once the onions have cooked, add the garlic in for just 30-60 seconds until it’s fragrant. Then, add in tomato paste and cook that out for a couple of minutes.
  6. Deglaze the pan with a bit of water, wine, or lemon juice, and then add in the chickpeas and coat it with the tomato mixture.
  7. Add in the chopped dried fruit, salt, and cook for 5 more minutes and you’re done!

Any traveler who has been to Morocco is probably familiar with the green tea that is served at all hours of the day in this North African country.

Served in beautiful and ornately-decorated metal or ceramic jars and poured steaming hot into cups, this tea is delightful and delicious. It’s the perfect way to start your morning or to settle down your tastebuds after a spicy meal.

Fortunately for us, even if you don’t live in Morocco, this tea is easy to prepare at home. Here’s how.

Ingredients

  • 1 liter of water
  • 3-4 bunches of fresh mint leaves
  • 4 tbsp sugar
  • 2 tablespoons of loose-leaf green tea

Instructions

Start off by pouring the liter of water into a tea pot and placing it on the stove to oil. Wait until the tea pot screeches and the water is boiling.

Once it’s done and has cooled off just a tad, add the mint leaves and the 4 tablespoons of sugar to the water and stir.

Next, you’ll want to place the loose leaf tea in an appropriate container and put it into the teapot. Let the tea brew for 3-4 minutes, approximately.

Take the tea leaves out, and you’re done! Pour from height into the tea cups in order to aerate the beverage.

Tajine or tagine is a Morrocan dish usually made in a clay pot full of meat, sweet dried fruit, and an amazing flavor. This tajine doesn’t require any special ingredients or materials, and is a super hands-off yet delicious dish!

Ingredients

  • 2 pounds of cubed beef shoulder with little fat
  • 1 1/2 pounds of red onion
  • 1 tablespoon of ground ginger
  • 1 tablespoon of salt
  • 1/2 tablespoon of pepper
  • 1/2 teaspoon of cinnamon
  • 4-5 saffron threads
  • 3 cups of water
  • 1 cup of dried fruit

Recipe

  1. Dice up the onions and sauté them in a heavy-bottomed pot until they’re transparent.
  2. Put the cubed beef in along with the ginger, salt, and pepper.
  3. Take the strands out of the cup, pour it into the pot along with 2 more cups of water.
  4. Leave it on low heat for an hour covered.
  5. After an hour, take the lid off, pour in the cinnamon but don’t stir, and put the lid back on for another 1-2 hours until the beef is super tender.
  6. Put the dried fruit in a small bowl of water for 20 minutes before serving.
  7. Serve the tagine with couscous and the dried fruit on top.

We’ve traveled to a lot of countries, but of all of them, our favorite to eat in just might be the North African country of Morocco.

Morocco offers fantastic landscapes and cities such as Marrakech and Rabat to get to know, but one of our favorite things to do there is simply to eat. From world-renowned dishes like couscous to lesser-known delicacies such as Moroccan mint tea, you can spend weeks there and try something new and delicious every day.

Many foreigners have traveled to Morocco and fallen in love with its cuisine, but not too many are like Amanda Mouttaki. This food expert, who is from the United States, actually got married and started a family in Morocco. She now spends her time channeling her love for the country and its cuisine on her Instagram account and with her company, Marrakech Food Tours.

The Moroccan cuisine is so amazing that everyone falls in love with it once they visit this colorful country. This is a traditional recipe for the delicious Moroccan chicken pie you need to try.

Ingredients

To make the Moroccan chicken pie you need:
3 cups shredded rotisserie chicken
1 chopped large onion
2 tablespoons all-purpose flour
2 tablespoons butter
1/3 cup raisins
1/2 teaspoon ground turmeric
1/4 cup chopped fresh cilantro
1/2 teaspoon ground cinnamon
1 cup reduced-sodium chicken broth
16 sheets frozen filo pastry
1/4 teaspoon pepper
1/2 cup finely ground slivered almonds
1/4 teaspoon salt

Instructions

Set the oven to 350 F degrees and prepare a pie plate by spraying cooking spray.

Cook the onions with butter for 5 to 6 minutes until they become soft. Add the turmeric, cinnamon and at the end the flour. Continue cooking for 1 minute while also mixing.

Pour the broth, then add the raisins. Wait for the mixture to boil and let it boil for 1 minute.

Transfer it in a bowl and combine it with chicken, salt, pepper, and cilantro.

Put one filo sheet in the pie plate on the bottom and edges as well. Top it off with 1 1/2 teaspoon of almonds. Continue layering the 7 following sheets and almonds.

When you’re done add the chicken mixture on top and finish off with the rest of the filo sheets.

Bake the Moroccan chicken pie for 30 to 40 minutes.

Carrots are generally not thought of as a vegetable that can take on spice well. However, Moroccan cooking is all about adding something special and spicy to any dish. Spiced carrots is a central dish to Morrocan cooking, and they couldn’t be easier to make! The flavor combinations come together so deliciously that you’ll wonder why you didn’t make them sooner.

Ingredients

What really brings this dish to life is the addition of fresh cilantro and coriander. Although they are often found together in Latin American dishes, they come together in these carrots in such a unique and delicious way.

Instructions

  1. Peel and slice 1 pound of carrots into rounds.
  2. Put them in a pot with 2 cups of water, along with 2 tablespoons of olive oil, 1/2 teaspoon of sweet paprika, a pinch of cayenne pepper, and salt and pepper to taste.
  3. Bring the water to a boil and cook the carrots on medium-high heat until all the water is evaporated about 20 minutes.
  4. Once the water is gone, pour in 1 tablespoon of white wine vinegar and a teaspoon of ground cumin.
  5. Let the salad come to room temperature before serving or putting in the fridge for later.
  6. When it’s time to serve, garnish with plenty of fresh cilantro.
