If you’ve always been afraid to bake a cake, this is the recipe for you. This is the type of cake that turns out moist and delicious every time, and there’s no doubt that everyone will love the taste!

Ingredients

  • 3 large room-temperature eggs
  • 3/4  cup of white sugar
  • 112 grams of extra-virgin olive oil+extra for greasing
  • 120 grams of whole milk
  • 1/2  teaspoon of vanilla extract
  • 1/4  teaspoon of almond extract
  • 1 1/2 cups of all-purpose flour+extra for the tin
  • 1 1/2 teaspoons of baking powder
  • 1/2  teaspoon kosher salt

Recipe

  1. First, combine the flour, baking powder, and salt in a medium-sized bowl and whisk to combine.
  2. Put the eggs and sugar into the bowl of a stand mixer and whisk on high for half a minute.
  3. Turn the speed to low, and pour in the olive oil very slowly, then the milk and both the extracts.
  4. Spoon in the dry mixture one spoonful at a time, stopping to scrape down the sides, and mix on low until everything is incorporated.
  5. Use some olive oil to grease an 8-inch cake tin and then lightly dust it in flour.
  6. Pour in the batter, and cook for 30-35 minutes or until a toothpick comes out clean.
  7. Cool in the tin for 5 minutes, transfer it to a wire rack to cool completely, and enjoy!
