Paninis are a type of Italian sandwich that are toasted on both sides and compressed to make a piping hot creation of melted cheese, meat, veggies, and toasted bread.

While originating in Italy and typically consisting of Italian-inspired fillings, the same idea can be used to make a type of Mexican panini that fuses ingredients from Italy and Mexico.

It’s perfect with a bowl of tomato soup or chili on a brisk winter day. So, how can you make this tasty fusion sandwich?

Ingredients

  • 2 slices of focaccia bread
  • 3 ounces of ground spicy Mexican chorizo
  • 2 tomato slices
  • 1 slice of mozzarella cheese
  • Arugula

Instructions

Start off by cutting two circular slices of ripe tomato and set to the side.

Then, heat the chorizo in a sauce pan with a dab of olive oil until it is throughly cooked.

Now, fill the sandwich from bottom to top in this order: chorizo, tomato, arugula, mozzarella cheese.

Place the completed sandwich inside of a panini toaster, turn on medium heat, and wait until the focaccia bread is golden-brown and the cheese has melted.

Once the panini has finished toasting and it’s cooled down for a couple of minutes, it’s ready to eat!

Wasn’t that easy?
