Quesdillas are one of our favorite quick dishes in the kitchen. Consisting simply of tortillas, cheese, and a little bit of butter or oil, this is such an easy, filling, and simple thing to make any time you’re in a bit of a rush.

Despite their simplicity, quesadillas can be modified in countless ways. The simple addition of one or two ingredients inside of your two tortillas can transform a quesadilla from dull to drab! Here are three suggestions for creative additions to your next quesadilla.

Mushrooms

Mushrooms are a filling way to put a unique touch on a quesadilla. We love combining mushrooms with simple, creamy cheeses such as mozzarella in mine. They can be canned or fresh–either way, you’re going to love it!

Avocados

Mmm, cheese and creamy avocado. The delectable texture that avocado acquires when it gets warm and is in contact with melty cheese in a quesadilla is an absolute treasure. You can take heart in knowing that it’s authentic too, being popular in Mexican gastronomy!

Pineapple

Hear us out here. You might want to brown your pineapple in a skillet or on a grill before placing it in a quesadilla, but if you combine it with a cheese that isn’t too sharp or aggressive, this combination is actually extremely delicious.

Check out this recipe for spinach and tomato quesadillas that is devilishly easy to make.

Ingredients

  • 2 flour tortillas
  • 100 g fresh spinach leaves
  • 1 Roma tomato
  • 100 g Colby Jack Cheese
  • 1 tbsp butter
  • Salt

Instructions

Start off by rubbing the butter on one side of each of the two flour tortillas. These will be the outer sides of the tortilla. Place one of them, buttered side down, in a pan on the stove.

Next, wash the spinach leaves and the Roma tomato under running water. You’ll then want to dice the tomato into small chunks.

After this, sprinkle the colby jack cheese on top of the tortilla that is in the pan. Place a layer of diced tomato on top. Finally, spread out the spinach leaves evenly on top of the cheese and tomato.

Now, it’s time to put the other tortilla on top and put the stove on medium-high. Cook until the tortilla is golden brown, and then flip.

Once both tortillas are golden brown and the cheese is melty, your quesadilla is ready. Enjoy!

Quesadillas aren’t known for being the healthiest food, but you can jazz them up and make them a big better for you with the addition of white beans and spinach! These quesadillas are super flavorful, have a lot of great textures, and the best part is that they cook up in just minutes.

Ingredients

For this recipe, you will need tortillas, fully cooked white beans, spinach, and the cheese of your liking. If you want to use frozen spinach, thaw it and try to get out as much water as possible.

Recipe

  1. In a bowl, put in the cooked white beans. Use 4 oz of beans for every tortilla that will make each quesadilla. Mash the beans until they form a nice paste.
  2. Chop up spinach and add it to a bowl with the beans, along with cumin, chili powder, garlic powder, and salt.
  3. Mix everything well and then add it into a tortilla along with whatever cheese you want to use. Fold it over so it makes a half circle shape and make sure the spread is even throughout the tortilla and none is falling out of the sides.
  4. Heat up olive oil in a pan over medium-high eat, put the tortillas in the pan and cook on each side for a few minutes until golden brown.
  5. Serve with salsa or guacamole and enjoy!
