As a native of the American South, there is perhaps no vegetable dish that’s more representative of my area than collard greens.

The base of the dish itself are the leafy greens of Brassica oleracea, commonly referred to as collards. Making delicious collard greens involves a little more effort, though.

Fear not, however: this collard green recipe is both simple and delicious. It will yield enough collard greens for about 4 servings.

Ingredients

  • 12 oz collared greens, cut into bite-sized slices
  • 2 teaspoons olive oil
  • 2 slices of bacon
  • 1 medium onion, diced
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ carrot, diced
  • 2 minced cloves of garlic
  • 2 cups chicken broth

Instructions:

Start by placing the olive oil in a large pot and heating it over medium-high heat.

Once the olive oil is hot, add the bacon. Cook it until it is finished and then remove it from the pan. Crumble it into small pieces.

After the bacon is crumbled, put it back into the pan and add the diced onion as well. Cook them until the onion is browned.

Once the onion is done, add the carrot, garlic, and the sliced collards. Cook them on medium-high heat until the leaves have wilted.

After this is done, add the chicken broth, salt and pepper to the pot. Cover and simmer over low heat for about an hour.

Once the leaves are tender, your collard greens are ready. As we say down south, good eatin’!

Fried potatoes are a fantastic, starchy side dish for any type of meal that involves a protein or vegetable-rich main course.

While traditional french fries are probably more popular, home fries are another great savory complement to your meals.

You can eat them with bacon and eggs for breakfast, or serve them with hamburgers at dinner. Let’s find out how to make them!

Ingredients

  • 2 medium-sized potatoes
  • Olive oil
  • Sea salt
  • Black Pepper
  • Garlic Powder
  • Rosemary
  • 1 medium red onion

Start off by washing the two potatoes and then chopping them into small, bite-sized pieces. They shouldn’t be too thick–if they are, they won’t cook all the way through.

Once the potatoes have been chopped up, place them in a medium-sized bowl. Pour olive oil into the bowl, using a quantity sufficient enough to give all of the potato pieces a light coating.

After you’ve coated the pieces in olive oil, sprinkle sea salt, black pepper, garlic powder, and rosemary on them to taste. Toss the potatoes to ensure an even coating.

Also, chop up the red onion into very small pieces and set aside.

Place a large skillet on the stove and turn the heat to medium to medium-high (usually a 6). Put the potato pieces in the pan and leave them to cook for about 5 minutes, turning often.

Once the potatoes have been in the pan for about five minutes, add the red onion. Continue to stir and flip the potato pieces until they are golden-brown and soft throughout.

Take them out of the pan, and serve. Yum!

Normally they are cooked with some sort of pork product, but you can make them vegan and vegetarian easily by omitting it. This recipe is super simple and very hands-off, so follow this awesome recipe and try making it tonight for dinner!

Ingredients:

Here are your basic ingredients for the recipe: onions, garlic, veggie stock, black-eyed peas, water, tomatoes, tomato paste, and brown sugar.

Method:

  1. Heat some oil over high heat in a large pot.
  2. Add in onions until translucent and then garlic just for a minute so they don’t burn.
  3. Add your vegetable stock, black-eyed peas, water, tomatoes, tomato paste, and brown sugar.
  4. Bring to a boil and then turn down the heat to low and simmer for 2 hours.
  5. Add more water if too much gets evaporated. Cook until the beans are tender
  6. Add salt and pepper last because salt will make the beans go hard during the cooking process.
  7. Serve with vegetables like collard greens and rice and enjoy!
