Knowing how to keep your produce fresh can be tricky. To make your life easier, here are a few tips on vegetables that are likely on your grocery list. And surprisingly, they all do better without the fridge!

Tomatoes

Storing tomatoes in the fridge can actually alter their texture and taste, and make them dull. This is because tomatoes are highly sensitive to cold temperatures and will react to their environment even after being picked. Instead, try to keep them at room temperature.

Potatoes

Potatoes last longest when kept in a cool, dark, and dry place. Refrigeration can cause the starches in potatoes to convert into sugars, affecting their flavor, texture, and even nutritional value. A cool pantry or a basket is an ideal spot for them.

Onions

Onions are another vegetable that doesn’t do well in the fridge. Cold, damp conditions can lead to sprouting and loss of flavor. They’ll do best in a dry, well-ventilated area.

Basil

Fresh herbs like basil are prone to chilling injury in the fridge, which can turn the leaves black. Instead, trim the stems, place them in a glass with water like cut flowers, and keep them at room temperature. This easy trick will keep your herbs fresh twice as long!

Grocery shopping is often easiest when you go on a weekly spree and buy ingredients for several days ahead. But one thing is always challenging— how do you keep vegetables fresh all week long?

Since not all vegetables are the same, there isn’t a universal answer. Some veggies are good in the pantry while others require being stored in the fridge. Here’s how to make sure they all stay fresh throughout the week.

Cool, Dry Place

Veggies like potatoes, onions, and garlic are best stored in a dry, cool place like a pantry. The ideal pantry temperature is between 50 and 60 degrees F. It should also be dark so the veggies don’t start sprouting. Other veggies you should store there are shallots, hard squash, and rutabagas. When stored properly, they can last a lot longer than a week.

Fridge

If your fridge has a crisper drawer, make sure to dedicate it to fresh produce. Some veggies will last for just a few days even in a crisper drawer, like asparagus, while others can be stored for several days or a few weeks. The list of vegetables to store this way includes eggplant, celery, cucumber, zucchini, peas, green beans, broccoli, cauliflower, carrots, beets, radishes, brussels sprouts, mushrooms, lettuce, and other greens.

Counter

The only vegetable (and it’s technically a fruit) that you should keep on the countertop are tomatoes, but away from direct sunlight. The fridge will mess up their texture.

When you get home from the grocery store, you probably only consider where to put your food if it needs to be put into the fridge, pantry, or if it’s frozen, the freezer. But, there are actually a lot of foods that do much better if stored in the freezer, so if you want to keep your food fresher for longer, go on and pop more things into the freezer!

Nuts

Because nuts have a really high-fat content, they can actually spoil kind of quickly if left out at room temperature. Instead, chuck those nuts into the freezer and you can eat them for up to 2 years! The best part is you don’t need to defrost them before you eat them because they won’t solidify or get icy, so go ahead and go nuts with your nuts.

Butter

If you’re someone who only occasionally uses butter for cooking and baking, this trick is perfect for you. Butter that’s put into a freezer bag can last up to 1 year if it’s a salted stick, and 6 months if it’s unsalted! This is great if you want to cube up butter in advance to use for pies and pastries, all you have to do is pull it out, let it sit for a few minutes to soften slightly, and bake away!
