White pizza is a great alternative way to enjoy pizza. Instead of using tomato sauce to make the base of the pie, white pizzas are typically made with ricotta cheese, mozzarella cheese, and olive oil.

White pizzas might not have tomato sauce, but this doesn’t mean that you can’t sneak a little bit of the sweet acidity of tomato onto your pie. Why not try sun-dried tomatoes, which add the perfect tomato essence to a white pie?

Arugula goes great on white pizzas, adding a welcome neutral crunch to a style that many complain is too soft and bland. When used in conjunction with other ingredients, arugula is a true white pizza gem.

I’m getting spring fever 😋🌱 It might be a little early for arugula in Colorado, but in just a few weeks the first leaves of these cold weather-tolerant greens will be shooting out of the dirt! And I’ll be there to eat them! . Arugula (also called “rocket”) is a member of the cruciferous vegetable family, like broccoli and kale. Some health benefits of arugula include: . 🌟 Cancer-fighting phytochemicals: Like other crucifers, it may have cancer-fighting properties. The major isothiocyanate in arugula, erucin, has been shown in vitro to arrest cancer cell growth by interfering with the building blocks of their cell walls (microtubules) [1]. . 🌟 Good source of nitrate: Like beets, leafy greens like arugula contain nitrate, which is converted to nitric oxide in the body and helps to make blood vessels more flexible, reduce blood pressure and enhance athletic performance! In fact, arugula grown in the fall had twice as much nitrate as the next leading leafy green, spinach [2]. . 🌟 Excellent source of vitamin C, vitamin K, magnesium and beta carotene! . Arugula has a distinctive bitter flavor that makes it a great compliment to most meals. It’s definitely my favorite salad green! Choosing baby tender arugula instead of fully grown can tamp down its bitterness. . Baby arugula grows well in colder areas and is ready to harvest in just a few weeks of sowing! Pasta salads are the best! They are tasty, always versatile and such an easy fix. This recipe can be your lunch, dinner and even breakfast. It’s made for 6 to 8 servings, which means you can also save some for the next few days. These are just a part of the reasons why you have to try the sun-dried tomato pasta salad right now.

Ingredients

Make the sun-dried tomato pasta salad by using:
1 teaspoon drained capers
6 tablespoons olive oil
12 sun-dried tomatoes in oil
kosher salt
1/2 pound cherry tomatoes cut in half
2 tablespoons red wine vinegar
3/4 teaspoon freshly ground pepper
1/2 pound fresh mozzarella
1 finely chopped garlic clove
1 cup packed basil leaves
3/4 cup black olives
1/2 pound orecchiette
1 cup freshly grated Parmesan

Instructions

You will need a food processor or a blender for this recipe. Fill it with the garlic, vinegar, one half of the sun-dried tomatoes, capers, pepper, and 2 teaspoons salt. Blend everything very well.

Put the pasta in pot and cook it according to the instructions. When it’s done, remove the water and mix the pasta with the sauce. Add in the mozzarella, the rest of the sun-dried tomatoes, olives, basil, and the Parmesan. Stir it and your sun-dried tomato pasta salad is ready!
