]]>The ingredient list includes:
1/4 teaspoon turmeric
1 tablespoon fish sauce
350 g fresh egg noodles (chow mein)
1 tablespoon brown sugar
400 ml can coconut milk
500 g sliced chicken breast fillets
2 teaspoons Thai red curry paste
500 ml chicken style liquid stock
1/2 cup fresh basil leaves
Open the noodles and cook them according to the instructions. Drain the water and add a little bit of salt.
While you’re waiting, you can grab a pan and heat 125 ml of the coconut milk. Leave it on high heat for 5 minutes. You should notice the milk separating from the oil.
Then, include the curry paste. Continue cooking for 1 to 2 minutes. Finish off by adding the turmeric.
Pour in the rest of the coconut milk and the stock. Let it simmer for 5 minutes.
You can add the chicken and again simmer for 5 minutes. When the chicken is cooked, pour the fish sauce, sugar, and basil.
Get 4 bowls and fill them with the noodles. Top the noodles off with the soup, and voila! Your Chiang Mai noodles are done!
