]]>For the mushroom toast, you need:
4 slices country-style bread
12 oz chopped mixed mushrooms
1 garlic clove
1 tablespoon white wine
6 tablespoons olive oil
1 finely chopped medium shallot
kosher salt
1 teaspoon chopped thyme
2 teaspoons fresh lemon juice
2 tablespoons unsalted butter
1 cup sour cream
1/2 teaspoon finely grated lemon zest
1 tablespoon finely chopped chives
1 cup trimmed watercress
freshly ground black pepper
Pour 3 tablespoons olive oil in a skillet and fry the bread. It will take you 2 minutes per side.
When you’re done, season the bread slices with salt and with the garlic.
Grab a knife and make tiny holes on the slices.
Pour 3 tablespoons in another skillet and cook the shallot and mushrooms together for 6 to 8 minutes. They should become brown.
Pour the wine and continue cooking for 30 more seconds.
Include the sour cream, mix well and leave it on the stove for 3-5 more minutes. Add in the lemon zest, thyme, salt, and pepper.
Mix the lemon juice, a little salt and the watercress in a bowl. It’s time to layer the bread, first with the mushroom mix, chives, then watercress mix.
