Add the oil in the pan and wait for it to heat. Pour in the peppers and onions together.
Cook for 2 to 3 minutes until you notice that the onions are translucent.
Include the garlic and mushrooms. Continue cooking for 5 more minutes, then add the spinach. Cook for1minute and remove the pan from the heat.
Get the pie crust and put it on the bottom of a 9-inch pan.
Whish the eggs in a bowl and combine them with pepper, milk, salt, and nutmeg.
Remove the liquid from the vegetables and add them on top of the pie crust.
The next layer should be cheese. Finish off with the egg mix on top of the cheese.
Place the vegetarian quiche in the oven for 40 to 45 minutes. Let it cool for 10 minutes before you serve it.
