When you think of salad, you probably imagine lots of leafy greens. Well, sometimes there doesn’t have to be any greens in it at all and it can be just as nutritious and delicious! Carrots are the base in this salad and they give it such a great texture and a boatload of vitamins, including A, B-6, and more. Try out this salad and have a break from your normal salad.
For the base, grate up as many carrots as you have people, about one per person. Shred the carrots yourself instead of buying pre-grated, it will be juicier and cheaper! Then, add in sliced green olives, wedges of tomato, and whatever fresh herbs you have on hand. If you want to add more vegetables to the salad, peppers and cucumbers work really well, but you can also leave it really simple.
The dressing for this salad couldn’t be easier to make. First, put some raw tahini in a bowl. Water it down slightly, then add in fresh lemon juice, chopped garlic, salt, and pepper. Mix it all together until the consistency is runny but still flavorful. You can also add in a pinch of paprika or cayenne to the mix. Then, pour it all over the base, toss, and serve!
