The ingredients you need for this apricot chicken recipe are:
1 lb fresh apricots (cut in half and pitted)
2 lb chicken thighs
For the sauce, you should get:
1/4 cup soy sauce
1/2 cup ketchup
1 clove minced garlic
1 cup brown sugar
1 cup apricot preserves
2 tablespoons white wine
Set the oven to 350 F degrees before you start.
Combine the ketchup, soy sauce, minced garlic, white wine, apricot preserves, and brown sugar in a saucepan. Place it on the stove and start mixing. When you can’t see the sugar anymore, take the saucepan off the heat.
Get a baking dish, add the chicken and top it off with the sauce. Make sure that they are covered with the sauce everywhere.
Place the baking dish in the oven for 45 minutes. Turn the chicken to the other side, then bake for extra 35 minutes.
Finish off by including the apricots and bake for 10 to 15 more minutes.
