With St. Patrick’s Day coming up soon, you might be thinking about ways to get into the festive spirit. While getting your drink on sure is fun, you’ll also need to think of ways to satisfy your and your friends’ appetites. Here is how you can cook up a mean Irish beef stew that will be a great centerpiece for your St. Patrick’s Day celebrations.

Ingredients:

  • 16-ounce bottle Guinness
  • 1 yellow onion
  • 2 pounds beef chuck stew meat cubes
  • 2 carrots
  • 2 stalks celery
  • 2 teaspoons fresh thyme
  • 3 tablespoons olive oil
  • 3 cloves garlic
  • 3 russet potatoes, cut and peeled
  • salt to taste
  • ground black pepper to taste
  • 4 cups beef broth
  • Chopped parsley

Instructions:

  1. In a large Dutch oven, heat a pot of 2 tablespoons of olive oil on medium heat. Season the beef cubes with salt and pepper and add them to the pot, heating them for 10 minutes. Place the beef chunks on a plate when cooked.
  2. Pour the final tablespoon of oil into the pot and add carrots, celery, and onion. Season with salt and pepper and cook for 5 minutes. Add garlic and cook for another minute.
  3. Transfer the beef back to the pot and add the beef broth, Guinness beer, potatoes, and themes, bringing the mixture to a boil. Reduce the heat to a simmer and season with salt and pepper, allowing to cook for a further 30 minutes until beef and potatoes are tender.
  4. Sprinkle chopped parsley over the stew before serving.

A beef stew is one of the most comforting and warming dishes you can imagine. It’s a great one for a weekend as you can leave it to slow cook for hours whilst you get on with other things. Here’s a recipe for a particularly hearty beef stew.

Ingredients

  • 2 pounds of beef
  • 1 large brown onion
  • 5 cloves of garlic
  • 4 medium carrots
  • 4 large potatoes
  • 2 stems of celery
  • 3 cups of beef broth
  • A large splash of red wine
  • 1/2 a cup of tomato puree
  • 1 teaspoon of Worcestershire sauce
  • 1 teaspoon of dried thyme
  • 1 tablespoon of plain flour
  • 2 tablespoons of cooking oil
  • Salt
  • Black pepper

Instructions

  1. In a large bowl, rub the flour, salt, and black pepper over the one-inch cubes of beef until it is coated.
  2. Heat your oil in a large pan that can go in the oven and add your beef cubes in batches, making sure to brown them on each side. Once cooked, transfer them to a plate.
  3. In the same pan, add your finely chopped onions and cook until translucent. Add your crushed garlic and cook for 2 minutes. Pour in your red wine to deglaze, and make sure to scrape up any browned bits from the bottom.
  4. Add your cooked beef to the pot and pour in your beef broth and tomato puree. Add your Worcestershire sauce and dried thyme. Make sure there is enough liquid and bring your pan to a low simmer. Cook on a low heat with the lid on for about 2 hours.
  5. Add your chunks of carrots, potatoes, and chopped celery to the pan and cook for about 30 minutes. After this, taste your stew for seasoning and add salt and black pepper if needed.
  6. Serve with crusty bread and enjoy!

Chicken Pot Pie is a classic dish, and it makes a hearty meal when you need to feed a family. But sometimes it might get a little monotonous, or you might not have chicken in the house. Luckily there are lots of other pot pies you can try out.

Herring Pot Pie

If you’ve ever seen the film Kiki’s Delivery Service, you probably remember the herring pot pie that Kiki must deliver in the rain against all odds. The pie looks delicious even animated, and luckily a few people have created recipes so that you can eat it in real life. Some recipes use pumpkin, while others require a mash-potato base. Either way, it’s delicious and quite a departure from the classic chicken.

Vegan Pot Pie

Even though chicken pot pie is named for its meat, its main characteristics are really that the ingredients be cooked in a broth until thick and then covered in a crust. That means it’s not too hard to turn this vegan by using vegetable stock, seitan, or whatever you like instead of chicken, and lots of veggies.

Guinness Beef Pot Pie

In an ultra-rich, ultra-original take on the classic dish, this is essentially beer-based beef stew covered with a crust. It’s also got mushrooms and other veggies that soak up all that beefy goodness.
