Since this add-in happens to be high in cholesterol and saturated fat, you should try making your own or at least look for a low-fat or vegan version.

Go Vegan

Speaking of switching to vegan dressing, how about making the rest of your salad plant-based, as well? You can easily ditch grilled chicken and bacon, two common Caesar salad ingredients, and replace Parmesan with plant-based cheese.

Choice of Toppings

Even if you don’t decide to go vegan with your Caesar, at least tread lightly when picking your toppings. Sticking to chicken is a good idea because it’s a good source of protein, but you should probably ditch bacon and switch to homemade croutons.

Caesar salad is a classic salad you’ve probably had a hundred times. But, with this recipe, you can be sure your taste buds will be totally shocked. We’re swapping out lettuce for Brussels sprouts, adding jalapenos to the dressing, so get ready for some extreme flavor.

Salad

For the base of the salad, you can either hand-shred or put the shredding attachment of a food processor on to cut up the Brussels sprouts. Whichever way you do it will be fine, and when they’re nicely shredded, put them into a bowl. To make the croutons, cut up some old bread into cubes and fry them in oil in the stove with some sliced garlic in there for extra flavor.

Dressing

To make this dressing, pour mayo, Worcestershire sauce, anchovy paste, the juice of two lemons, the zest of 1 lemon, 3 egg yolks, a spoonful of Dijon mustard, a clove of garlic, 1 fresh jalapeno, and fresh cracked black pepper into a food processor.

Start the food processor and then drizzle in 1/4 cup of olive oil, or until the sauce has emulsified. Finish it with Asiago or Parmesan cheese and pulse it a few more times. Pour the dressing over the sprouts and then put the croutons on top and enjoy!

A Caesar salad is a classic Italian-American salad that has been a favorite for decades. However, it is often not very healthy. And if you’re going to have a salad, you don’t want it to be completely bad for you.

This kale Caesar salad is about to change everything though, as it uses fresher ingredients to make a still yummy Caesar salad with a healthier twist.

Recipe

  1. Start by creating your own croutons. This is very easy to do as long as you have some stale bread! Just cut the bread into pieces, drizzle over olive oil, salt and pepper, and bake in the oven at 400 F for 10-12 minutes.
  2. While the croutons bake, make the salad dressing. The best and fastest way to do this is in a blender or with a hand blender, so if you do it with a whisk just know it will take longer.
  3. Combine both the zest and the juice of two lemons with 1/2 cup of grated Parmesan, and 1 tablespoon of Dijon mustard. Once that’s well mixed, start slowly drizzling in 1/4 cup of olive oil to create the emulsion.
  4. Once the dressing is made, toss it with a ton of kale and any other vegetables you want to use, put the croutons on top, and enjoy!
