Matcha also has a decent amount of caffeine in it, if you’re looking for a less caffeinated option.

Chai Lattes

Masala chai, drunk daily in India, is one of the best drinks to make on cold days. It uses a similar spice profile to such fall favorites as pumpkin pie spice and apple pie spice, with warm sweetness and even spicy if you’re feeling adventurous. Here’s how to make it easily at home, getting the most out of your spices.

Ingredients:

  • Black tea
  • Milk
  • Sweetener
  • Cinnamon
  • Cloves 
  • Ginger
  • Nutmeg
  • Allspice
  • Cardamom
  • Black pepper, coriander, and anise (optional)

Instructions:

  1. Start by putting your milk in a saucepan over low heat with all your spices. If you have whole spices, it’s better to you use them here so you won’t have any grittiness, but ground works just fine too. Let your milk heat up slowly, giving it lots of time to soak up flavor from the spices.
  2. Be sure not to let it boil, as it may burn. Once it’s beginning to simmer, add your tea and let it steep for around five minutes. If you prefer a thinner, less rich tea add boiling water along with the tea.
  3. Once it’s steeped for long enough, add your sweetener to taste, strain out the spices and tea, and serve.

What’s better than cozying up to the fireplace with a good book and a spiced chai latte in hand? Cozying up while enjoying chai spiced cookies! If you love the taste of fall and chai lattes, these cookies are exactly what you need!

Ingredients:

  • 2 3/4 cups of flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 3/4 cups of sugar
  • 2 1/2 teaspoons of cinnamon
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground cardamom
  • 1/2 teaspoon of ground allspice
  • 1/4 teaspoon of black pepper
  • 1 cup of room temperature unsalted butter
  • 1 egg
  • 1/2 teaspoon of vanilla extract

Instructions:

  1. Sift together flour, baking soda, baking powder, and salt into a large bowl.
  2. Put the sugar and all the spices into a small bowl and mix well. Take out 1/4 cup of the sugar mixture for later, and then dump the rest of the sugar into the bowl of a stand mixer. 
  3. Add in the butter and beat on medium for about 3 minutes until it’s lighter in color. 
  4. Add in the egg and vanilla extract, combine for another minute, and then slowly add in the dry ingredients just until it’s mixed in. 
  5. Use a mini ice cream scooper to make balls and then roll them in the reserved sugar mixture. 
  6. Put them on a parchment-lined sheet, bake at 350 F for 8-10 minutes, cool on wire racks, and enjoy!
