Chickpeas are a great source of protein, and along with all the other ingredients inside these bars like quinoa flour, and hemp seeds, you will be sure to feel energized and full throughout the day. These bars are a little sweet, a little tart, and completely healthy and delicious. Breakfast is the most important meal of the day, and filling it with plant-based protein is the best way to go. So start your day off right with these amazing bars!

Ingredients

To make this recipe vegan you will need to make a flax egg. All that means is combining 1 part ground flax seed with three parts water. Let it sit for 15 minutes and you’re ready to go!

Instructions

  1. Put the flax egg, 1 cup of cooked chickpeas, and 2 large bananas together in a food processor and blend until smooth.
  2. Then, add 3/4 cup of quinoa flour, 1/2 cup of coconut sugar, 1/2 teaspoon of baking powder, a pinch of salt, and 1 teaspoon of cinnamon. Blend to combine.
  3. Finally, add 1/4 cup of hemp seeds, 1/4 cup of vegan chocolate chips, and 1/4 cup of frozen raspberries. Pulse to combine
  4. Pour the mixture into a greased dish. Sprinkle more chocolate chips and raspberry pieces onto the top.
  5. Bake at 350F for 25-30 minutes. Enjoy!
