  6. Once all the truffles are coated, return them to the refrigerator for another 15-20 minutes to firm up.

Ingredients (to make 10)

  • 1 1/2 cups of broken biscuits or cookies of your choice
  • 1 cup of milk chocolate
  • 1/2 cup of dark chocolate
  • 1/2 cup of unsalted butter

Instructions

Chocolate mousse is one of those desserts that can seem basic, but if done right, it’s pure indulgence! The trick to perfect chocolate mousse is using good quality chocolate. And, of course, it doesn’t hurt to add a topping of your choice!

Ingredients:

  • 8 ounces semi-sweet dark chocolate, broken into 1/2-inch pieces
  • 6 large eggs, separated
  • 6 tablespoons granulated sugar, divided
  • 2 cups heavy cream
  • ¼ cup sweet liqueur (such as Chartreuse, amaretto, mandarin, or Grand Marnier)
  • 3 tablespoon water
  • Whipped cream and grated chocolate, for garnish

Instructions:

  1. Break the chocolate into ½-inch pieces and place in the top of a double boiler over simmering water. Cook over low heat, stirring occasionally, until the chocolate is melted. Remove from the heat, and set aside.
  2. Place the egg yolks and 3 tablespoons water in a heavy saucepan. Cook over very low heat, whisking vigorously and constantly for about 6 minutes, until the yolks begin to foam and thicken. Whisk in the liqueur, and cook, whisking constantly, until the sauce thickens enough to coat the back of a spoon. Remove from the heat and pour the mixture through a fine wire-mesh strainer into a bowl. Discard any solids bits. 
  3. Fold the melted chocolate into the sauce. Transfer the chocolate mixture to a large bowl and set aside. 
  4. Beat the cream with an electric mixer on high speed for 2-3 minutes until stiff peaks to form. Beat in 2 tablespoons of sugar toward the end. Fold it into the chocolate mixture.
  5. Using the electric mixer, whisk the egg whites on high speed for around 1 minute, until soft peaks start to form. Beat in the remaining ¼ cup of sugar, and continue beating until stiff peaks form. Fold into chocolate-cream mixture.
  6. Spoon the mousse into a bowl, and chill between 4 and 24 hours, until ready to serve. Garnish with whipped cream and grated chocolate.

Melting chocolate should be the easiest thing to do, but it never quite turns out the way we want it to. It’s so easy to burn and to get the right silkiness. There are two ways to melt chocolate: in the microwave or on the stovetop. Here are your step-by-step directions on how to do each technique. It might seem difficult, but you’ll have it down pat in no time!

Stovetop

  1. Fill a saucepan with 1-2 inches of water and place it on the stovetop, bringing it to a boil.
  2. Place a slightly smaller heat-safe bowl on top of the saucepan. The bowl should be resting on the saucepan and not touching the water.
  3. Place the chocolate in the smaller bowl and mix it frequently for 2-3 minutes, making sure all the chocolate melts. When the chocolate is melted remove the bowl from the double boiler.

Microwave

  1. Put the chocolate in a small microwave bowl.
  2. Microwave for 30 seconds on 30% power. Stir it well and continue microwaving it in 30-second intervals until the chocolate is melted.

S’mores are one of those amazing treats you forget about until you’re in front of a campfire, and then you’re reminded of how badly you wish you could recreate that taste without needing to go out to the woods. Luckily, modern technology makes s’more-crafting right from your own kitchen extremely easy. It may not give you an exact replica of a s’more from a campfire (unless you can safely build one in your kitchen), but it’s pretty close and it still hits all the most important s’more points.

What You’ll Need

  • Marshmallows (preferably the large variety–they will be labeled “campfire”)
  • Chocolate and other toppings
  • Graham crackers
  • Tinfoil
  • A toaster oven

(Note: if you don’t have a toaster oven, you can try using an actual oven. Just try to avoid using a microwave.)

Making the S’mores

The method is quite simple. Start by placing two marshmallows a safe distance from each other on top of the foil in the toaster oven, and turn it to a medium-dark toast setting.

While you’re waiting for the marshmallows to heat up, set up your work surface. Lay out your graham crackers in halves and place your chocolate on one side. It’s important to do this BEFORE you remove the marshmallows because they will start deflating quickly and you want to get them on the graham crackers before that happens.

Keep an eye on the marshmallows, and when you see they’ve puffed up a lot and are brown on the top carefully take them out on the tinfoil. Bring them to your work surface and put them on top of the chocolate by sliding a fork or spatula into the bottom of the marshmallow. A bit of it will stick to the tinfoil and that’s okay, you’ll still get plenty of ‘mallow.

Place your other graham cracker on top, squish, and enjoy! This method isn’t a perfect replica of campfire s’mores, but it actually cooks your marshmallow more evenly than a fire and makes it easier to add other toppings.

You’re probably familiar with the common phrase “patience is a virtue”, and you should fully embrace it when making homemade chocolate. This process can be a fun adventure, but you shouldn’t rush it if you want to do things right, and here are three cases when you should take things slow.

Using Low Heat

Many people end up burning their chocolate in an attempt to speed up the melting process. They usually do it by turning up the temperature too high, but this is a huge no-no. Keeping the temperature low or medium is your best bet, and you should stir it along the way so it wouldn’t end up burning.

Don’t Pour Hot Chocolate

After melting your chocolate, you shouldn’t pour it into the molds right away and call it a day. It’s important to give it some time to cool down before taking this step. You can use this time to make sure that your molds are clean and dry because moisture won’t do your chocolate any good.

Speeding Up the Freezing Process

The fastest way to freeze your chocolate is to simply place it inside your freezer, but it’s not the best. You should probably let it go solid without using the freezer because the oils will separate and your chocolate will be too grainy if it’s been frozen too quickly.

Sometimes, you just want something a little sweet and indulgent, without all the hassle of baking an entire cake or dessert. That’s where this super sweet, easy chocolate biscuit bake comes in. Using only a few ingredients, you can have some indulgent treats on the table in no time.

Ingredients (to make 10)

  • 1 1/2 cups of broken biscuits or cookies of your choice
  • 1 cup of milk chocolate
  • 1/2 cup of dark chocolate
  • 1/2 cup of unsalted butter
  • 2 tablespoons of chopped mixed nuts

Instructions

  1. Make sure the cookies or biscuits are broken up into small pieces.
  2. Melt the chocolate and butter together.
  3. Stir the biscuit into the melted chocolate, then pour the mix into a lined and greased baking tray.
  4. Place the mix in the fridge and allow to set for 2 – 3 hours. Once set, slice into bars.

Chocolate mousse is one of those desserts that can seem basic, but if done right, it’s pure indulgence! The trick to perfect chocolate mousse is using good quality chocolate. And, of course, it doesn’t hurt to add a topping of your choice!

Ingredients:

  • 8 ounces semi-sweet dark chocolate, broken into 1/2-inch pieces
  • 6 large eggs, separated
  • 6 tablespoons granulated sugar, divided
  • 2 cups heavy cream
  • ¼ cup sweet liqueur (such as Chartreuse, amaretto, mandarin, or Grand Marnier)
  • 3 tablespoon water
  • Whipped cream and grated chocolate, for garnish

Instructions:

  1. Break the chocolate into ½-inch pieces and place in the top of a double boiler over simmering water. Cook over low heat, stirring occasionally, until the chocolate is melted. Remove from the heat, and set aside.
  2. Place the egg yolks and 3 tablespoons water in a heavy saucepan. Cook over very low heat, whisking vigorously and constantly for about 6 minutes, until the yolks begin to foam and thicken. Whisk in the liqueur, and cook, whisking constantly, until the sauce thickens enough to coat the back of a spoon. Remove from the heat and pour the mixture through a fine wire-mesh strainer into a bowl. Discard any solids bits. 
  3. Fold the melted chocolate into the sauce. Transfer the chocolate mixture to a large bowl and set aside. 
  4. Beat the cream with an electric mixer on high speed for 2-3 minutes until stiff peaks to form. Beat in 2 tablespoons of sugar toward the end. Fold it into the chocolate mixture.
  5. Using the electric mixer, whisk the egg whites on high speed for around 1 minute, until soft peaks start to form. Beat in the remaining ¼ cup of sugar, and continue beating until stiff peaks form. Fold into chocolate-cream mixture.
  6. Spoon the mousse into a bowl, and chill between 4 and 24 hours, until ready to serve. Garnish with whipped cream and grated chocolate.

Pecan Pie

Melting chocolate should be the easiest thing to do, but it never quite turns out the way we want it to. It’s so easy to burn and to get the right silkiness. There are two ways to melt chocolate: in the microwave or on the stovetop. Here are your step-by-step directions on how to do each technique. It might seem difficult, but you’ll have it down pat in no time!

Stovetop

  1. Fill a saucepan with 1-2 inches of water and place it on the stovetop, bringing it to a boil.
  2. Place a slightly smaller heat-safe bowl on top of the saucepan. The bowl should be resting on the saucepan and not touching the water.
  3. Place the chocolate in the smaller bowl and mix it frequently for 2-3 minutes, making sure all the chocolate melts. When the chocolate is melted remove the bowl from the double boiler.

Microwave

  1. Put the chocolate in a small microwave bowl.
  2. Microwave for 30 seconds on 30% power. Stir it well and continue microwaving it in 30-second intervals until the chocolate is melted.

S’mores are one of those amazing treats you forget about until you’re in front of a campfire, and then you’re reminded of how badly you wish you could recreate that taste without needing to go out to the woods. Luckily, modern technology makes s’more-crafting right from your own kitchen extremely easy. It may not give you an exact replica of a s’more from a campfire (unless you can safely build one in your kitchen), but it’s pretty close and it still hits all the most important s’more points.

What You’ll Need

  • Marshmallows (preferably the large variety–they will be labeled “campfire”)
  • Chocolate and other toppings
  • Graham crackers
  • Tinfoil
  • A toaster oven

(Note: if you don’t have a toaster oven, you can try using an actual oven. Just try to avoid using a microwave.)

Making the S’mores

The method is quite simple. Start by placing two marshmallows a safe distance from each other on top of the foil in the toaster oven, and turn it to a medium-dark toast setting.

While you’re waiting for the marshmallows to heat up, set up your work surface. Lay out your graham crackers in halves and place your chocolate on one side. It’s important to do this BEFORE you remove the marshmallows because they will start deflating quickly and you want to get them on the graham crackers before that happens.

Keep an eye on the marshmallows, and when you see they’ve puffed up a lot and are brown on the top carefully take them out on the tinfoil. Bring them to your work surface and put them on top of the chocolate by sliding a fork or spatula into the bottom of the marshmallow. A bit of it will stick to the tinfoil and that’s okay, you’ll still get plenty of ‘mallow.

Place your other graham cracker on top, squish, and enjoy! This method isn’t a perfect replica of campfire s’mores, but it actually cooks your marshmallow more evenly than a fire and makes it easier to add other toppings.

Using Low Heat

Don’t Pour Hot Chocolate

After melting your chocolate, you shouldn’t pour it into the molds right away and call it a day. It’s important to give it some time to cool down before taking this step. You can use this time to make sure that your molds are clean and dry because moisture won’t do your chocolate any good.

Speeding Up the Freezing Process

The fastest way to freeze your chocolate is to simply place it inside your freezer, but it’s not the best. You should probably let it go solid without using the freezer because the oils will separate and your chocolate will be too grainy if it’s been frozen too quickly.

Triple Chocolate Mousse Cake

This is for all you chocolate lovers out there. With chocolate in every single one of the three layers, this cake is really a dream come true. The bottom layer is a rich chocolate almond cake, topped with caramelized white chocolate ganache, milk chocolate mousse, and a mirror glaze. Yum!

Chocolate Madeleines with Dulce de Leche
