Babaghanoush is a delicious Middle Eastern dip used in for all sorts of occasions, and for most meals of the day. The main ingredient for it is eggplant, which is treated in a way that gets transformed into a creamy, lush dip. This is the perfect dish to make and have in the fridge for a snack, to display at parties at the dip table, or even on the dinner table with a Middle Eastern feast. If your mouth is watering now, follow this recipe!

Instructions

  1. Put entire eggplants on a foil-lined baking sheet. Don’t cut it at all!
  2. Put the eggplants under the broiler and cook for 45-60 minutes. Turn them every 10 minutes or so. The eggplants should be completely tender.
  3. Pull the eggplants out of the oven and let them rest for 15 minutes until cool enough to touch.
  4. Carefully cut the eggplant in half and scoop out the flesh. Put the flesh in a strainer over a bowl and let the excess liquid drain off.
  5. Put the pulp into a food processor with garlic, lemon, tahini, and salt.
  6. As the machine is going, drizzle in olive oil. Taste as you go for seasoning.
  7. Serve alongside pita bread or vegetables!

Jerk spice is a recipe that hails from Jamaica from back in the 17th century. African slaves who escaped into the wild of the island created this flavor combination by using what was growing naturally around them. Jerk is a spicy flavor bomb that is normally added to pork or chicken, but can be just as good on vegetables if you are vegetarian or vegan! Make it is also super easy, so there’s no excuse not to try it!

Ingredients

The main ingredients for jerk are scotch bonnet peppers, which are very similar to habanero peppers. They are spicy and taste slightly fruity and sweet, which goes well with Carribean cooking. If you can’t find scotch bonnet peppers, you can replace them with habanero.

Instructions

  1. Dice 3 scotch bonnet peppers, 4 cloves of garlic, and 2 onions.
  2. Put all of them into a food processor along with 1 tablespoon of thyme and allspice, 1/2 tablespoon of nutmeg, ginger, and brown sugar, along with the juice of 1 lime, 100ml of white vinegar, and 1 tablespoon of olive oil.
  3. Process everything together until it’s a smooth paste.
  4. Taste and add salt and pepper as needed.
  5. Spread on your favorite meat or vegetables, allow it marinate for at least a couple of hours, and cook!

No matter what you fry, it’s going to taste good, and tofu is no exception. This bean curd is native to Asia and used often in the cuisine. Plain styles of tofu are completely gluten-free, which is great for people with that sensitivity! It also provides lots of protein and is low in calories. If you want to make fried tofu, it really couldn’t be easier, and the result is a crispy yet chewy bite that is perfect in everything from salads to stir-frys to ramen.

Pressing Tofu

No matter how you use tofu, first you have to press down the liquid out of it. You can do so by placing a paper towel on a plate and putting the block of tofu on top. Then, cover it with another plate and weigh it down with a large can or even a book. Let the tofu sit for 20-30 minutes until it is surrounded with liquid.

Instructions

  1. Cut the pressed tofu into cubes and season with 1 teaspoon of salt.
  2. Then, evenly coat with 3 tablespoons of cornstarch.

Shakshouka is a Middle Eastern and North African dish that is beloved by all who try it. Essentially it is a gorgeous sauce in which eggs are poached in, creating the perfect balance of flavors. There are so many different ways to cook shakshouka and to make it your own, but this is by far one of the best recipes. In the end, you’ll have a dish that you can serve right in the pan it was made in, and you can use it for breakfast, lunch, or dinner.

Ingredients:

The star of this recipe is eggs, tomatoes, and peppers. These are the fundamentals of the dish, but you can always add in extra vegetables like eggplant, zucchini, or whatever you have lying around. The spices are also crucial to make sure you have them on hand.

Method:

  1. Sautee onions and garlic until the onions are translucent.
  2. Add in diced peppers and let cook for a few minutes.
  3. Then add fresh diced tomatoes as well as salt, garlic powder, chili powder, cumin, paprika, and harissa if you have.

Gyoza is a dumpling hailing from Japan which is very similar to a Chinese potsticker. They actually were created in China, but have been changed slightly and adapted heavily into Japanese cuisine. What makes them different is their slightly thinner dough as well as being smaller than a potsticker. These delicious dumplings may seem like hard work to make, but they take only an hour and three ingredients. Let’s get cooking!

Method

  1. Measure out 2 cups of flour and sift into a large bowl
  2. Boil 1/2 cup of water and dilute 1/2 teaspoon of salt into it
  3. Combine the water and the flour together with a rubber spatula until everything is mixed together
  4. Knead the dough for ten minutes
  5. Divide the dough in half, and roll each half into a long log
  6. Wrap each log in plastic wrap and allow it to rest for 30 minutes
  7. Cut the log into 1-1 1/2 inch pieces
  8. Sprinkle some cornstarch onto your surface and roll the pieces into a ball
  9. Smash them down with your hand, and then take a rolling pin and flatten them further
  10. Use a cookie cutter to cut out perfect circles and use the scraps to make more wrappers
  11. Stuff with your choice of filling, fry, and enjoy!
