Got leftover pasta sitting in the fridge? Don’t let it go to waste! With a dash of creativity and a sprinkle of kitchen magic, transform yesterday’s pasta into exciting new dishes that will tantalize your taste buds. Here are three innovative ways to breathe new life into your leftover pasta.

Pasta Frittata

Transform your leftover pasta into a mouthwatering frittata. Preheat the oven to 375°F (190°C). In a bowl, whisk together eggs, salt, and pepper. Mix in the leftover pasta, ensuring it’s well-coated. Pour the mixture into a greased oven-safe pan, top with grated cheese, and bake for 20-25 minutes or until golden and puffy. Slice into wedges for a delightful pasta frittata that’s perfect for brunch or a quick dinner.

Crispy Pasta Nest

Give your leftover spaghetti a crunchy twist. Heat olive oil in a pan and press the pasta into the hot oil, forming a nest shape. Cook until the bottom is golden and crispy. Flip and repeat on the other side. Serve the crispy pasta nest with a side of marinara sauce for a fun and crunchy take on traditional pasta.

Pasta Salad

Turn your leftover pasta into a convenient and refreshing pasta salad. Layer the pasta with cherry tomatoes, cucumbers, olives, and feta cheese in a jar. Drizzle with your favorite dressing and seal the jar. Shake it up when ready to eat for a delicious and portable pasta salad that’s perfect for lunch on the go.

Frittatas can be so tricky to make, especially if you don’t have the right recipe. This one will be a real refreshment in your cookbook.

Ingredients:

To prepare these frittatas you need 12 eggs, 1/2 teaspoon salt, 1 tablespoon olive oil, 3 tablespoons full-fat dairy, 1 cup grated cheese, 3 to 5 cups vegetables. For the dairy part, you can use literally anything you like including yogurt, heavy cream, sour cream, milk and more. The same thing applies to the vegetables. Chop some basil or parsley for garnishing.

Instructions:

Set the oven to preheat on 350 F degrees. Get a bowl and crack all the eggs inside it. Include your dairy product and mix everything together. Add salt. The mixture has to be very well blended. Include half the cheese and mix again.

Cook the vegetables for a few minutes until they all turn soft. Let them cool for a few minutes and include them in the bowl with the eggs. You will need a muffin pan with 18 cups. Fill all of the cups with the mixture, at around 1/3 of the cup. Add the remaining cheese on top. Put the pans inside the oven and cook for 17 minutes. Garnish with your green of choice. The mini frittatas are all done!
