]]>To prepare these frittatas you need 12 eggs, 1/2 teaspoon salt, 1 tablespoon olive oil, 3 tablespoons full-fat dairy, 1 cup grated cheese, 3 to 5 cups vegetables. For the dairy part, you can use literally anything you like including yogurt, heavy cream, sour cream, milk and more. The same thing applies to the vegetables. Chop some basil or parsley for garnishing.
Set the oven to preheat on 350 F degrees. Get a bowl and crack all the eggs inside it. Include your dairy product and mix everything together. Add salt. The mixture has to be very well blended. Include half the cheese and mix again.
Cook the vegetables for a few minutes until they all turn soft. Let them cool for a few minutes and include them in the bowl with the eggs. You will need a muffin pan with 18 cups. Fill all of the cups with the mixture, at around 1/3 of the cup. Add the remaining cheese on top. Put the pans inside the oven and cook for 17 minutes. Garnish with your green of choice. The mini frittatas are all done!
