Do you love fruit tarts, but you’re trying to stay on your diet? Well, we’ve got a treat for you! This delicious tart is much healthier than a regular one, and it tastes just as good, if not better. You’ll have to try it for yourself.

Ingredients:

  • 2 cups of cashews
  • 1 1/2 cups of oat flour
  • Pinch of salt
  • 1/3 cup of maple syrup+ 2 tablespoons
  • 2 tablespoons of the milk of your choice
  • 2 teaspoons of vanilla extract divided
  • 1 1/2 cups of Greek yogurt
  • Fruits of your choice

Instructions:

  1. Start by pulsing the cashews in a food processor until they’ve turned into a meal. You don’t want to pulse them too much or you’ll get cashew butter, which is not what we want!
  2. Pour the oat flour, salt, 1/3 cup of maple syrup, milk, and 1 teaspoon of vanilla into the food processor and process until it forms a dough.
  3. Form the dough into a circle either right onto a sheet pan or use a tart pan if you have one and want the whole effect.
  4. Bake for 10-15 minutes at 325 F and then let cool completely and chill for half an hour before moving on.
  5. Put the yogurt into a bowl with the rest of the maple syrup and vanilla and stir well.
  6. Pour the yogurt on top of the tart base, and then cover in the fruits of your choice! Arrange them nearly or dump them on, however you want, and then dig in!

Tarts are a super impressive dessert to show off, and it actually doesn’t take much to make one! The best thing is that it’s totally customizable, and you can use this base tart for any type of tart you like!

Ingredients

  • 1 egg yolk
  •  1 tablespoon heavy cream
  •  1/2 teaspoon vanilla extract
  •  1 1/4 cups all-purpose flour
  •  2/3 cup powdered sugar
  •  1/4 teaspoon salt
  •  8 tablespoons of cubed, cold, unsalted butter

Recipe

  1. In a bowl, whisk together the egg, cream, and vanilla extract. 
  2. In a food processor, add in flour, powdered sugar, and salt to combine. Add in the butter and pulse 15-20 times until the mixture looks like coarse sand.
  3. Slowly add in the wet ingredients while you pulse.
  4. Lay out a piece of plastic wrap and pour out the dough and flatten it into a disk about 6-inches in diameter.
  5. Cover it in plastic wrap, chill for 1 hour, and take it out 10 minutes before you want to use it. 
  6. On a floured surface, roll out the pastry so it’s a little bigger than your tart pan, and then place the pastry in the pan.
  7. Freeze the shell for 30 minutes before you bake for 30 minutes at 375 F, with foil on it and baking beans to weigh it down. 
  8. Rotate halfway, then bake for 5-10 minutes uncovered and pull it out when it’s golden.
  9. Cool and then fill with any type of pastry cream, another filling, and fruit!
