Khinkali

Georgian dumplings Khinkali are made using flour and water and stuffed with one of many different fillings before being boiled. Theyโ€™re similar to Chinese dumplings and Italian ravioli, but still authentic for Georgian cuisine.

Badrijani Nigvzit

If youโ€™re having difficulties pronouncing the name of the dish, everyone will know what you mean if you just say eggplant with walnut. This is a popular finger food that consists of fried eggplant slices covered with walnut paste.

Yesterday, @leschenroeder and I hosted his parents and uncle for dinner and it was the perfect excuse to make badrijani nizgvit: Georgian fried eggplant that melts away to reveal a garlicky cilantro-walnut pesto spiced with khmeli suneli (a blend of blue fenugreek and marigold petals among other things). It's no wonder these are a staple of the Georgian table – it's hard to get enough!!
