]]>The beauty in this meal is that you can use whatever ingredients you have leftover from the night before and some fresh vegetables. Start with your leftovers like hard-boiled eggs, chicken, or shrimp and build around them. We suggest using five to seven other components and one dip like hummus, tahini, or babaganoush. Top it off with some feta cheese, olive oil, and za’atar spice for a restaurant-worthy meal.
Don’t let the leftover pasta go to waste. Simply toss it with olive oil, vinegar, canned tuna, arugula, capers, and tomatoes for a hearty pasta salad. If you had chicken or salmon last night, make a salad or sandwich with the leftovers.
