Working From Home? Here’s What to Make For Lunch

Working from home allows you to have tons of options when deciding what to eat for lunch. You’re not limited to grabbing something easy to transport or having to prep your lunch the night before—anything in your kitchen is at your disposal. If you feel like you’ve been in a meal rut, here are four easy and quick lunch ideas.

Mezze Spread

The beauty in this meal is that you can use whatever ingredients you have leftover from the night before and some fresh vegetables. Start with your leftovers like hard-boiled eggs, chicken, or shrimp and build around them. We suggest using five to seven other components and one dip like hummus, tahini, or babaganoush. Top it off with some feta cheese, olive oil, and za’atar spice for a restaurant-worthy meal.

Last Night’s Meal

Don’t let the leftover pasta go to waste. Simply toss it with olive oil, vinegar, canned tuna, arugula, capers, and tomatoes for a hearty pasta salad. If you had chicken or salmon last night, make a salad or sandwich with the leftovers.

Soup or Chili

Soups and chillis are super satisfying and they’ll keep you full. Add some pesto, yogurt, toasted nuts, parmesan cheese, shallots, and chilies, and don’t forget some fresh bread to dip into it.

Salads

Salads are one of the easiest dishes to throw together and you can always switch up the proteins so you don’t get bored with them. We love canned tuna, shrimp, shredded chicken, boiled eggs, or steak in our salads.

EASY SALMON SALAD RECIPE✨🥗 topped with pickled red onions, walnuts, feta cheese, avocado and egg! 🥑 — I don't know about you guys, but I've been so bad about eating lunch since staying at home 🤷🏻‍♀️ But this salad is my new favorite – it honestly tastes AMAZING (even @my.second.stomach devoured it 😂), and if you prep some ingredients beforehand, it only takes minutes to make! — Here's some of the ingredients I prepped before and just keep in my fridge: Pickled Red Onions 🧅 🔹Thinly slice half of a red onion 🔹Add onion slices to a jar with the juice of two limes, 1 tbsp of apple cider vinegar, and salt + pepper to taste. 🔹Let sit in the fridge overnight (or at least a few hours) to get that bright pink color! Soft Boiled Eggs 🥚 🔹Boil water in a large pot and add eggs in. Cook for 6-7 minutes and then put the eggs in a bowl of ice water to stop the cooking. Peel carefully once cool and keep them in the fridge for the week! Salad Dressing 🍋 🔹Combine lemon juice (I used half of a lemon), 1 tbsp of olive oil, and a splash of balsamic. Season with salt and pepper to taste and mix thoroughly. For the salmon, I seasoned it with salt, pepper, and paprika. Sear it in a hot pan with olive oil for about 4 minutes each side! — Once you have all the ingredients just top your salad with whatever you want! 🤗 I personally used arugula, walnuts, feta cheese, pickled red onions, avocado, egg, scallions, and some @traderjoes Everything but the Bagel seasoning 🌿 — Hope you guys enjoy + save this recipe for a quick + healthy meal idea! ❤️🤤
