But what if we told you that there is a way you can store pancake batter better and save yourself the trouble of making it again tomorrow or the day after?

Instagram cook Nicole Keshishian Modic recently shared a genius hack that will prevent leftover pancake batter from going to waste and save you the trouble of having to make some each time you want pancakes. According to her, all you need to do is freeze it in an ice cube tray.

In a video posted on Instagram, Modic demonstrated how the hack works. According to her, you first need to prepare your pancake mix. Then, pour it into an ice cube tray while adding other ingredients like chocolate chips or blueberries. Then pop the ice cube tray in the freezer.

The next morning, heat a skillet on medium heat and brush it with cooking spray. Pop one pancake batter cube and put it on the skillet. Cover with a lid and cook on each side until the pancakes are golden brown. That’s it!

When it comes to the pan you choose, the best two options are either a cast iron or a non-stick. And if you use a griddle, a cast iron type is still the best. You want these types of pans because, believe it or not, it’s actually better not to use any oil or butter in order to fry the pancakes. Using fat to cook the pancakes will lead to unevenly cooked pancakes, and if you can use a pan that is non-stick or something that gets really hot like a cast iron pan, you have a better chance of cooking them more evenly.

Butter

While butter isn’t necessary for the cooking part of the pancakes, it is crucial that you have some in the batter. Not only does it impart a great flavor into the pancakes, but the fat will also make it softer and easier to cook. The thing with the butter that a lot of people get wrong is they melt it to add it to the bowl with all the wet ingredients. However, the better thing to do is to put it into the batter last after the other wet ingredients have been combined with the dry, this way the butter doesn’t harden.
