Slightly sweet, nutty, and a big earthy, roasting them really brings out the sweetness and makes for a perfect side dish. You can either cut them lengthwise or into disks, drizzle over olive oil, salt, and pepper, and roast to perfection!
Turnips can be a bit bitter, but when cooked right, they add a great balance to any meal. For this soup, start by sauteing cut leeks in vegan butter or oil. Add in peeled and diced turnips and cook for just a few minutes. Cover everything with broth and simmer until everything is soft. Puree, season, and serve!
If you want a fresher dish for winter, make a grated carrot salad with some fresh lemon juice and green onions and you’re set!
