To properly honor Ravioli Day (which is on March 20th, mind you), it’s time to roll up our sleeves and dive into the delicious world of making it at home. Mastering ravioli-making is a great way to wow your guests (or just enjoy a yummy meal by yourself—why share?). To help you out, here are four top tips for ravioli perfection.

Fresh is Best

Arrivederci, store-bought pasta—fresh ingredients are the name of the game when it comes to ravioli. Whip up your own dough and fillings using the freshest produce and cheeses you can find to get a flavorful experience in every bite.

Mind Your Measurements

Precision is key. Take your ravioli from good to great by nailing your measurements. Roll out the pasta dough to just the right thickness and measure the fillings with care to ensure a perfectly balanced flavor.

Seal with Love

Keep your ravioli intact by sealing them up like a pro. A dab of water or beaten egg along the edges of your pasta dough helps create a tight seal, ensuring your ravioli stay intact during cooking for an Instagrammable presentation.

Get Creative with Fillings

Think outside the pasta box. While classic fillings are always a hit, why not shake things up with some unexpected flavor combinations? From savory meats to fresh herbs and zesty cheeses, the possibilities are endless.

To make a great pasta dish, you have to cook your pasta just right. Take it off the heat too early; it is undercooked and too chewy. Leave it on for too long, and it will overcook and be all mushy.

Fixing undercooked pasta is simple; you just boil it for a bit longer. But saving overcooked pasta seems impossible, right? Well, it actually isn’t.

While you can always repurpose the overcooked pasta or cook another batch, you shouldn’t give up on it so easily. There is a simple hack that will allow you to save overcooked pasta and end up with a dish that you intend to make.

How to Save Overcooked Pasta

Add some olive oil or butter to a pan over medium heat. Throw in your overcooked pasta and sauté until you notice it is getting firm again and the edges are browning up a bit. It will take between five and 10 minutes, depending on the amount of overcooked pasta you need to save.

Once the pasta firms up, proceed with pairing it with cheese or your favorite pasta sauce. It will taste so similar to the regularly cooked pasta that you will not even notice the difference.

Pasta can be eaten in many shapes and forms, but not all of them are created equal. Certain pasta shapes work better with certain pasta dishes—including pasta salad. If you’re not sure which pasta shape to go with when making this dish, use this brief guide to make the right choice.

Ditch Fresh Pasta

There’s something truly magical about fresh pasta and it can take many pasta dishes to the next level, but pasta salad isn’t one of them. Fresh pasta works much better with warm pasta dishes, and it won’t do such a great job when combined with your dressings and other salad ingredients.

Say No to Long Pasta

Making pasta salad with long pasta shapes isn’t impossible, but it won’t do your salad any good. Long pasta shapes, such as linguine and spaghetti, can be a good choice if you’re making pasta salad for yourself alone, but they’ll give you a lot of trouble if you want to serve it to a larger group.

Shorter Varieties

When it comes to pasta salad, shorter pasta varieties are the way to go! From fusilli and gnocchi to farfalle, and penne, shorter shapes will do wonders for your pasta salads because salad dressings and other ingredients will easily get trapped in their tiny nooks and crannies.

Most people tend to pour pasta water down the drain after their meal is done, but this is actually a huge waste. Pasta water is liquid gold that can be used in many different ways that never crossed your mind, and here are some of the best methods to put it to some good use.

Tasty Soups

Pasta water can help you take your soups to a whole new level. You can dissolve a stock cube in your leftover water a day before and the flavor of your stock will be significantly better.

Pasta Sauces

Cooking pasta isn’t the only thing you can do with your water. Leftover water shouldn’t be thrown away because you can use it to loosen thick sauces, thus making your pasta 100% tastier.

Preparing Rice

You can also take your rice to a whole new level if you decide to save some of your pasta water. Replace it with the regular tap water that you usually use to cook your rice, and your dish will taste better than ever.

Unique Dough

Pasta water can also be used in baking and it will give your dough a special taste. It’s especially great for bread and pizza because the water will retain some of the flavors and starch from the pasta.
