If you’re a huge cinnamon lover, chances are that the snickerdoodle is a favorite for you. That’s because snickerdoodles are essentially just a cinnamon sugar based cookie without much else going on. It’s simplicity at its finest, with a dash of cinnamon goodness to boot.

Peanut Butter Cookies

Similar to the snickerdoodle, here’s another cookie that thrives on its bold simplicity. Peanut butter cookies also don’t have much going on except for the fact that they’re baked with peanut butter, making them a peanut butter lover’s dream!

Ingredients:

• 1/2 cup butter, softened
• 1 cup + 2 tablespoons sugar, divided
• 1 large egg, room temperature
• 1/2 teaspoon vanilla extract
• 1 1/2 cups all-purpose flour
• 1/4 teaspoon baking soda
• 1/4 teaspoon cream of tartar
• 1 teaspoon ground cinnamon

Instructions:

1. Preheat the oven to 375 F.
2. Cream butter and 1 cup sugar until it’s light and fluffy and beat in the egg and vanilla.
3. In another bowl, whisk flour, baking soda, and cream of tartar, until it’s a creamed mixture.
4. In a small bowl, mix cinnamon and remaining sugar.
5. Shape the dough into 1-inch balls and roll them in cinnamon sugar.
6. Place 2-inches apart on ungreased baking sheets.
7. Bake until light brown, for 10-12 minutes. Remove from pans to wire racks to cool.
