The internet is a funny place—you can take a food that’s been around forever, give it a new name or use the right buzzword and suddenly people can’t seem to eat enough of it (remember that “nature’s cereal” trend that was all over TikTok last year?) While the term “stone fruit” isn’t exactly new, the name seems to have taken off as an example of such a buzzword and inspired countless recipes from food bloggers as a result. It’s used to describe fruits such as peaches, cherries, and plums that have a stone-like pit in the center. These fruits are delicious on their own, but are even better as part of these popular recipes.

Stone Fruit Crostini

This crostini is easy to prepare, yet versatile enough to serve as both an appetizer at your next summer get-together or just for yourself should a craving strike. Use whatever fruit you have on hand and serve over some burrata cheese. 

Peach Cobbler Cookies

Clementines are those easy to peel, very small mandarin oranges, and they are so sweet and delicious. If you want to go beyond just eating them plain, check out these fun recipes!

Salad

Clementines are such a great base to petite salads for one! All you have to do is peel them, and cut them into rounds with a very sharp knife. Then, you an add herbs like mint, other fruits like pomegranate seeds, and toss with salad greens or leave as they are and drizzle over olive oil!

Granita

If you’re in the mood for something cool and refreshing, this is the dessert for you! A granita is basically like a shaved ice, and it’s so delicious and easy to make.

Just juice about 24 clementines until you get 2 cups worth of juice. In a saucepan, boil 1/4 cup of water, 1/4 cup of sugar, and 1/2 inch of ginger together until the sugar dissolves. Let it steep for 30 minutes off the heat, and then throw away the ginger. Add in the juice as well as 1 tablespoon of lemon juice. Put it into a shallow dish, freeze for 3 hours, and then scrape it with a fork. Serve and enjoy this icy treat!

If there is a single fruit that is associated with summertime, it would have to be the watermelon. This juicy, refreshing fruit is in season during the hottest months of the year, and its taste and light, watery character goes perfectly with warm summer days.

With that being said, there’s a lot of possibilities for consuming watermelon. Here are three ways to use watermelon to make creative treats this summer!

Freeze It

Did you know that watermelon is over 90%, well, water? This means that you can freeze watermelon and create something that will be very similar to a popsicle! Try adding a little bit of lemon juice and sugar to watermelon cubes, and then put a wooden stick inside. Boom, natural watermelon popsicles!

Make a Drink

There are tons of drink possibilities that involve watermelon, both alcoholic and non-alcoholic. Some of my favorite drinks that use watermelon include watermelon lemonade, vodka watermelon cocktails, and watermelon margaritas.

Grill It

That’s right, you can grill slices of watermelon, and it’s absolutely delicious! My recommendation is to toss a little bit of chili powder on the slices, coat them with olive oil, and then pop them on the grill. It’s a surprisingly delicious side dish.

One of the best things about making a cold salad using cooked vegetables is that you let it marinate for as long as you like, and it makes for an easy make-ahead dish for cookouts, picnics, or just for lunch.

This artichoke salad can be used with fresh artichokes if you know how to clean them properly, or frozen if they’re too pricey for your budget. Either way, this salad is sure to impress and delight!

Recipe

  1. This salad is super customizable, so as long as you have a strong artichoke base, feel free to throw in whatever veggies your heart desires!
  2. First, prepare the fresh artichokes or thaw out frozen quartered artichokes.
  3. Either steam or grill the artichokes — whatever you prefer — and leave them to the side.
  4. In a bowl, whisk together a simple dressing of olive oil, fresh lemon or lime juice, dried basil, dried oregano, dry rubbed sage, salt, and pepper.
  5. Finely dice half a red onion and let that sit in the dressing to neutralize the flavor.
  6. Cut up bell peppers, cucumbers, and tomatoes and put them in a bowl.
  7. Add the artichokes, pour over the dressing and toss, and then serve right away or chill in the fridge for up 3-5 days!

However, if you can’t let go of the idea of waiting for winter for soup, there are plenty of cold soups that you can make to satisfy your craving! Make these soups and enjoy the warm weather without breaking a sweat.

Avocado Soup

This soup is unique in that the liquid used is sparkling water! This really lightens up the soup while keeping the creaminess of the avocado. Simply put the two together in the blender with olive oil, ice, and salt and pepper.

Watermelon Gazpacho

This soup, which is native to Andalucia, Spain, is one of the best ways to enjoy summer. For this soup, all you need to do is blend watermelon, cucumber, jalapeno, tomato, shallot, cilantro, mint, lime juice and olive oil together until smooth. Chill and serve with herbs.

Ajo Blanco

This soup is made up of almonds and raw garlic, which is surprisingly a delicious combination! Put the following into a food processor and blend until smooth: almonds, garlic, bread, water, oil, sherry vinegar, and salt. Serve immediately or chill with grapes and splash of olive oil.
