]]>Clementines are such a great base to petite salads for one! All you have to do is peel them, and cut them into rounds with a very sharp knife. Then, you an add herbs like mint, other fruits like pomegranate seeds, and toss with salad greens or leave as they are and drizzle over olive oil!
If you’re in the mood for something cool and refreshing, this is the dessert for you! A granita is basically like a shaved ice, and it’s so delicious and easy to make.
Just juice about 24 clementines until you get 2 cups worth of juice. In a saucepan, boil 1/4 cup of water, 1/4 cup of sugar, and 1/2 inch of ginger together until the sugar dissolves. Let it steep for 30 minutes off the heat, and then throw away the ginger. Add in the juice as well as 1 tablespoon of lemon juice. Put it into a shallow dish, freeze for 3 hours, and then scrape it with a fork. Serve and enjoy this icy treat!

Did you know that watermelon is over 90%, well, water? This means that you can freeze watermelon and create something that will be very similar to a popsicle! Try adding a little bit of lemon juice and sugar to watermelon cubes, and then put a wooden stick inside. Boom, natural watermelon popsicles!
There are tons of drink possibilities that involve watermelon, both alcoholic and non-alcoholic. Some of my favorite drinks that use watermelon include watermelon lemonade, vodka watermelon cocktails, and watermelon margaritas.
That’s right, you can grill slices of watermelon, and it’s absolutely delicious! My recommendation is to toss a little bit of chili powder on the slices, coat them with olive oil, and then pop them on the grill. It’s a surprisingly delicious side dish.

This soup, which is native to Andalucia, Spain, is one of the best ways to enjoy summer. For this soup, all you need to do is blend watermelon, cucumber, jalapeno, tomato, shallot, cilantro, mint, lime juice and olive oil together until smooth. Chill and serve with herbs.
This soup is made up of almonds and raw garlic, which is surprisingly a delicious combination! Put the following into a food processor and blend until smooth: almonds, garlic, bread, water, oil, sherry vinegar, and salt. Serve immediately or chill with grapes and splash of olive oil.
