This Cold Artichoke Salad is Exactly What You’ll be Craving this Summer

One of the best things about making a cold salad using cooked vegetables is that you let it marinate for as long as you like, and it makes for an easy make-ahead dish for cookouts, picnics, or just for lunch.

This artichoke salad can be used with fresh artichokes if you know how to clean them properly, or frozen if they’re too pricey for your budget. Either way, this salad is sure to impress and delight!

Recipe

  1. This salad is super customizable, so as long as you have a strong artichoke base, feel free to throw in whatever veggies your heart desires!
  2. First, prepare the fresh artichokes or thaw out frozen quartered artichokes.
  3. Either steam or grill the artichokes — whatever you prefer — and leave them to the side.
  4. In a bowl, whisk together a simple dressing of olive oil, fresh lemon or lime juice, dried basil, dried oregano, dry rubbed sage, salt, and pepper.
  5. Finely dice half a red onion and let that sit in the dressing to neutralize the flavor.
  6. Cut up bell peppers, cucumbers, and tomatoes and put them in a bowl.
  7. Add the artichokes, pour over the dressing and toss, and then serve right away or chill in the fridge for up 3-5 days!
