Roasted tomatoes are a very interesting ingredient. Tomatoes themselves are acidic but also slightly sweet so when roasted, they turn into a savory umami flavor bomb. That makes them perfect addition to all sorts of recipes and they couldn’t be easier to make.

Making The Tomatoes

  1. First, start by cutting your tomatoes in half, or if you’re using cherry tomatoes, you can keep them whole.
  2. Put them on a baking sheet and rub them with olive oil and salt.
  3. Roast in the oven at 375F for between 30-45 minutes until they are slightly charred and super wrinkly.

Using The Tomatoes

Roasted tomatoes give body and depth to tomato soup, as opposed to using regular tomatoes. Just puree them with some broth, onions, and garlic and you have a dynamite dish.

Salsa

Roasted tomatoes in a salsa is such an intense flavor, especially when paired with other roasted vegetables like onions and jalapenos. Throw the tomatoes, onions, jalapenos, and garlic into a food processor. Squeeze in lime juice and salt and puree until your desired consistency. Finish with chopped cilantro and you’re ready for taco night!

Salt is one of the most essential ingredients in any dish for many reasons. When it goes on meat, it tenderizes it and makes it softer. When it goes into a dessert, it actually makes it taste sweeter. Salt is something that really brings out the flavors out of ingredients, making it taste even better and more like itself. But, if you want to go beyond just the different kinds of crystallized salt, try some of these salty ingredients.

Pickles

Pickles are a great ingredient to use because it brings acidity and saltiness to a meal. Although they are usually eaten on their own, you can add them to many dishes like potato salad, deviled eggs, or even add the brine to different sauces.

Miso

Miso paste is a fermented soybean product from Japan, most often associated with the soup that it is made with it. However, miso is a salty and umami bomb and can be used in many dishes like ragu, tomato sauces, even non-Japenese soups.

Anchovies

Anchovies are a great source of salt, protein, and other important vitamins. You can make them into many salad dressings, use it in pasta sauces, or chopped into small bits and used in pretty much anything.
