Roasted tomatoes are a very interesting ingredient. Tomatoes themselves are acidic but also slightly sweet so when roasted, they turn into a savory umami flavor bomb. That makes them perfect addition to all sorts of recipes and they couldn’t be easier to make.

Making The Tomatoes

  1. First, start by cutting your tomatoes in half, or if you’re using cherry tomatoes, you can keep them whole.
  2. Put them on a baking sheet and rub them with olive oil and salt.
  3. Roast in the oven at 375F for between 30-45 minutes until they are slightly charred and super wrinkly.

Using The Tomatoes

Roasted tomatoes give body and depth to tomato soup, as opposed to using regular tomatoes. Just puree them with some broth, onions, and garlic and you have a dynamite dish.

Salsa

Roasted tomatoes in a salsa is such an intense flavor, especially when paired with other roasted vegetables like onions and jalapenos. Throw the tomatoes, onions, jalapenos, and garlic into a food processor. Squeeze in lime juice and salt and puree until your desired consistency. Finish with chopped cilantro and you’re ready for taco night!
