]]>To prepare the jacket potatoes you will need:
1 baked potato
1 hot-smoked salmon fillet
50g light soft cheese
oil
lemon juice
1 heaped teaspoon capers
a little lemon zest
Set the oven to 435 F degrees. Prep the potatoes with seasoning and oil, then place them on a baking pan. Cook for 25 minutes. After the time is up, you should lower the heat to 375 F degrees. Leave them in for an hour up to 1 hour and 15 minutes.
When the potatoes are soft you can take them out. Now, cut them across the middle so that you can fill them up.
While you’re waiting you can prepare the filling. Combine the lemon juice with 50g light soft cheese. Add some seasoning to the mix.
Now add it on top of the baked potato, then include a hot-smoked salmon fillet as well. Finish off with the capers and lemon zest.
This is one of the most delicious fillings for jacket potatoes ever. Serve them hot!
