Ingredients:

  • 1 1/2 pounds ground beef
  • 1 1/2 teaspoons dried oregano
  • Ground black pepper salt to taste
  • 1/2 cup white rice
  • 1 medium onion
  • 1 tablespoon and 2 teaspoons Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 2 carrots
  • 2 cans roasted and diced tomatoes
  • 2 teaspoons paprika
  • 2 chopped parsley leaves
  • 6 cloves garlic
  • 6 cups chopped cabbage
  • 4 cups beef broth

Instructions:

  1. Heat oil in a large pot over medium heat. Pour beef, carrots, and onions into the pot and season with salt and pepper. Cook for about eight minutes, until vegetables are tender, and make sure to break up the beef constantly while cooking.
  2. Add garlic to the mix and cook for another minute. Throw in 1 cup of water along with cabbage, beef broth, Worcestershire sauce, brown sugar, rice, paprika, and oregano. Season with salt and sugar.
  3. Bring the mixture to a boil and then reduce the heat to medium-low. Stir occasionally and cook for about 20 minutes, until the rice and vegetables are tender. Add parsley to the mix.
  4. Top up with more parsley before pouring the soup into bowls and serving.

If you’re short on time or just feeling a little lazy, try this cabbage stew. It’s savory and salty; you’ll want a second helping!

Ingredients

  • One green cabbage head
  • 1 lb. ground beef
  • 1 onion
  • 1 of each green and red pepper
  • Four cloves garlic
  • 1 cup uncooked rice
  • 1 jar tomato sauce and water filled in the jar twice
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp red chili flakes
  • Salt and pepper to taste
  • Optional: sour cream when served

Instructions

  1. To a medium pot, add ground beef and cook until brown
  2. In the meantime, chop your onion, garlic, peppers, and cabbage
  3. Add onion and garlic and add to the pot and stir occasionally for about 5 minutes
  4. Add in the rice and let it become slightly clear
  5. Next, add in your chopped peppers and cabbage and stir
  6. Pour in the tomato sauce and fill up the jar twice with water
  7. Add in spices and stir until everything is well combined
  8. Cover and let it cook on low for about an hour
  9. Once everything is fully cooked, remove it from the heat
  10. Serve plain or with sour cream, and enjoy!

Cabbages are a great veg throughout winter. They’re in season now so grow perfectly well locally and are a tasty addition to many meals. Red cabbage has a delicate, nutty flavor and brings a delightful pop of color to your plate too. Here are three ways to include this fun vegetable in your diet.

Rainbow Slaw

As mentioned, red cabbage brings a gorgeous purple shade to any dish. When included in a coleslaw recipe you can enjoy the pretty pink color that it adds. Finely slice red cabbage with carrot, onion, and red pepper, and then stir through some mayonnaise, a splash of vinegar, and some seasoning. 

Red Cabbage Steak

While this fun twist on this vegetable doesn’t have the same nutritional value as a steak, it’s perfect as a super tasty side to your choice of carb and protein. Slice the whole cabbage into flat pieces about 1-2cm thick. Drizzle each side with oil, salt, pepper, and za’atar seasoning. Fry these steaks in a hot pan for about 5 minutes on each side and serve immediately.

Add to Bean Stew

Simply fry some onion, red cabbage, carrot, and garlic in a large pan. Add some canned beans of your choice, some chopped tomatoes, and some veg stock. Increase the heat and simmer for 15-20 minutes, until the sauce has thickened and everything is soft and tender. Serve with crusty buttered bread or mashed potato.

Growth Differences

You don’t even have to taste cabbage or Brussels sprouts to tell they’re different, it’s enough to see them while they’re still growing. Cabbages grow close to the ground, but that’s not the case with their smaller cousin because sprouts grow their tiny heads on a tall central stem.

Taste Differences

Once you take a bite of these veggies, it’s pretty clear they’re not one of the same.
