One of the great things about chicken is how versatile it is, and this recipe uses this to its advantage by utilizing a delicious Cajun spice blend. Cajun is a spice blend of paprika, cayenne pepper, garlic powder, and lots of other spices commonly found in Louisiana cuisine. It brings an incredible warmth and mild fieriness to this chicken dish, that goes great with rice.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons of Cajun seasoning (store-bought or homemade)
  • 2 tablespoons of olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 tin of diced tomatoes
  • 1 cup of chicken broth
  • Salt
  • Black pepper
  • A sprinkle of Cajun magic (optional, but highly recommended)

Instructions

  1. Begin by sprinkling the Cajun seasoning generously over both sides of the chicken breasts, rubbing it in gently and evenly.
  2. Heat the olive oil in a large skillet over medium-high heat. Once the oil shimmers, add the seasoned chicken breasts and cook until they’re golden brown on both sides and cooked through, about 5-6 minutes per side. Set them aside on a plate to rest.
  3. In the same skillet, add the chopped onion, minced garlic, and diced bell pepper. Sauté them until they’re softened and fragrant. Pour in the diced tomatoes and chicken broth, stirring to combine. Bring the mixture to a gentle simmer and let it cook for a few minutes.
  4. Season the sauce with salt, pepper, and an extra sprinkle of Cajun magic, adjusting the flavors to your liking.
  5. Return the cooked chicken breasts to the skillet. Let the chicken simmer in the sauce for a few more minutes, allowing it to soak up all the delicious flavors.
  6. Serve your Cajun chicken hot and fresh, garnished with a sprinkle of chopped parsley or green onions for a pop of color and freshness. This dish goes great with fried rice.

The Holy Trinity

Every type of cuisine has some sort of base that is always used, like a mirepoix for the French and sofrito for the Spanish. In Cajun cooking, it’s the holy trinity. This includes green bell pepper, celery, and onions. This is the base for just about any dish etoufee to gumbo.

Cajun Spice

Cajun spice is also used widely to give a punch of flavor and spice. The following is a cajun spice blend you can make at home so you can always have it on hand: paprika, kosher salt, ground black pepper, ground white pepper, garlic powder, onion powder, dried thyme, and cayenne pepper.

Roux

Since there are so many stews in Cajun cooking, perfecting a roux is essential. All it is melted butter combined with flour and cooked until the flour taste is out. Depending on what kind of stew you are making you will cook your roux for different amounts of time.
