Follow This Simple Recipe for Delicious Cajun Chicken

One of the great things about chicken is how versatile it is, and this recipe uses this to its advantage by utilizing a delicious Cajun spice blend. Cajun is a spice blend of paprika, cayenne pepper, garlic powder, and lots of other spices commonly found in Louisiana cuisine. It brings an incredible warmth and mild fieriness to this chicken dish, that goes great with rice.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons of Cajun seasoning (store-bought or homemade)
  • 2 tablespoons of olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 tin of diced tomatoes
  • 1 cup of chicken broth
  • Salt
  • Black pepper
  • A sprinkle of Cajun magic (optional, but highly recommended)

Instructions

  1. Begin by sprinkling the Cajun seasoning generously over both sides of the chicken breasts, rubbing it in gently and evenly.
  2. Heat the olive oil in a large skillet over medium-high heat. Once the oil shimmers, add the seasoned chicken breasts and cook until they’re golden brown on both sides and cooked through, about 5-6 minutes per side. Set them aside on a plate to rest.
  3. In the same skillet, add the chopped onion, minced garlic, and diced bell pepper. Sauté them until they’re softened and fragrant. Pour in the diced tomatoes and chicken broth, stirring to combine. Bring the mixture to a gentle simmer and let it cook for a few minutes.
  4. Season the sauce with salt, pepper, and an extra sprinkle of Cajun magic, adjusting the flavors to your liking.
  5. Return the cooked chicken breasts to the skillet. Let the chicken simmer in the sauce for a few more minutes, allowing it to soak up all the delicious flavors.
  6. Serve your Cajun chicken hot and fresh, garnished with a sprinkle of chopped parsley or green onions for a pop of color and freshness. This dish goes great with fried rice.
