A boil is a traditional Cajun dish, but it is also more than that. The idea of a boil is to gather everyone together and enjoy a filling meal that is eaten casually around a table covered in a newspaper instead of plates. Making a successful boil is not difficult at all, but it does require a little bit of patience and very specific spices. Ingredients
The main ingredients for a boil is crawfish or shrimp, sausage, potatoes, lemon, butter, and corn. What makes a boil so special though are the spices used. The spices are as followed: whole allspice, whole mustard seeds, dill weed, cayenne, bay leaves, and salt.
Method
- Bring a large pot of water to a boil. Add in the spices and red skin potatoes and wait about 8 minutes for them to just start to soften.
- Add in the corn and wait a few more minutes until you add the sausage if you plan on doing so.
- Once the corn is just about done, add in the lemon and crawfish or shrimp for a few minutes.
- Then, drain, pour over melted butter and more lemon juice and you’re ready to serve!
