Ingredients:

• 3 1/4 cups of crispy rice cereal, preferably not puffed
• 1/4 cup of cocoa nibs or mini chocolate chips
• 1 tablespoon of coconut oil
• 3/4 cup of raw tahini
• 1/4 cup plus one tablespoon of honey
• 3/4 teaspoon of salt
• 1/2 teaspoon of vanilla extract

Instructions:

1. Start by combining the cereal and cocoa nibs or chocolate chips together in a large bowl.
2. Prep a square pan with parchment paper, leaving enough hanging off the sides that when the bars have completely set you can just lift them out using the parchment.
3. In a saucepan, melt the coconut oil, and then add in the tahini, honey, and salt, whisk and cook until everything is combined, just 30-60 seconds.
4. Take it off the heat and whisk in the vanilla extract.
5. Then, pour the mixture all over the cereal and toss to coat.
6. Pour that into the pan and press down to make it compact. You might want to use the bottom of the bowl for this so it’s super tight.
7. Chill in the fridge for 30-60 minutes, take it out of the pan, and cut into bars! They will keep for 1 week in the fridge.

2. Add in 4 cups of miniature marshmallows and stir consistently until the mixture is almost completely incorporated. Cook for another 2-3 minutes but keep an eye on it.
3. Take the mixture off the heat and stir in the cereal immediately. Make sure every piece is coated in the mixture or it will not stay together.
4. Pour all the ingredients into a greased dish that is also covered in wax paper and press down on it so it spreads evenly.
5. Allow the cereal treat to cool on the counter before you go ahead and cut it into squares.
6. Put the squares in a freezer bag to keep them fresh up to 2 days in a dark cool place beside the refrigerator, or 6 weeks in the freezer!
